I have no idea which one i should buy. I'm leaning towards the
Fat Strat but that's only because of the looks, Walnut

If it were up to me, on looks I prefer the regular Strat. The humbucker just looks odd on the Fatty. Maybe I'd go for a regular one and then look at upgrading the bridge pickup to one of those fancy vertically stacked pickups (dunno what the proper name is, but there are two pickups, so it works like a humbucker, but it is thin and from the surface of the guitar looks like one single coil - more in keeping with the traditionla Strat design).

I also prefer the lighter colour of the neck on the regular model.

Both will sound good, so why not just base your decision on which one you prefer the look of?

I'd go for this one, as it'd have more sound options :1 humbucker. 2 single-coil pickups. 5-way switching.

As far as I know they are a long thin magnet; as opposed to the 6 round individual magnets used generally in pickups. This would give a broad reception of the 6 strings, rather than a specific ' targeted' response to each individual string.
Just guessing off the top of my head, but pretty sure this would be the case.

Want a strat? Buy this one but first really play it and compare it to older ones from the 60's and 70's, IMO, nothing feels like the older strats.

Speaking of Strats., Slave2daGroove, I played a '62 that my brother-inlaw has / had , this would be about 15 years ago. I was amazed at how light it was! Of course it wasn't, but it felt like it must've been made of Balsa wood .
@ the time I had a Les Paul, and he fell in love with it; because of the sustain created by the Humbucker's. He taught me alot of stuff jamming with him. But he is a jealous bugger , and would turn away from me so I couldn't see how he was playing. That was fine as it made me figure it out for myself, or improvise.
Sorry , going Off topic, but when you mentioned 60's Strats, these memories came to me. He sold the Strat, got $3,000 (Aus); and bought a Les Paul. A better one than mine of course .
Guitarists can be real weird people I've found generally.

Stacked pickups iirc means that they use an extra layer to cancel hum. I have spoken to a great luthier who thinks they sound a little out of phase (real out of phase, NOT middle-position strat "out of phase"!)
Anyway, it depends on the muisc you play. If you want searing heavy sustaining leads, go for the humbucker-equipped one or you'll go through a LOT of effect pedals trying to get that heavy, sustaining, harmonic-laden sound.
