3121 Jazz Cuisine… Featuring dishes from around the world created by Prince’s Executive Chef, Lena Morgan in concert with the World-Class Culinary team and Chef de Cuisine Honorio Mecinas at the Rio.




3121 Jazz Cuisine offers dry aged cuts of premium beef, organic graze fed lamb and fresh wild –caught seafood, all grilled over our olive and mesquite wood. We also utilize the freshest available organic produce to complete the dishes.



Featured dishes include Grilled Center Cut Filet Mignon with Mushroom Truffle Butter and Foie Gras Wine Reduction, Pine Valley Organic Lamb Duet with Roasted Cepes and Mint Lamb Jus and our more exotic Furikake Dusted Black Cod served over Spicy Gomoku Fried Rice and Ponzu Glaze and Wild Alaskan Salmon Encrusted with Cilantro/Jalapeno Relish with Soft Herb Chevre Polenta and Pineapple Salsa.



Signature desserts are enhanced by our Pastry Chef team, Jim McNamara and Vincent Pilon, to infuse homemade classics into elegant representations. Our Mochachino Tower - A composition of Espresso and Kahlua Soaked Chocolate Cake, Layered amidst a Filling of Mascarpone and Caramel in a Chocolate Box - our version of Tiramisu. Don’t forget the Carrot Cake, loaded with Pineapple Chunks and Toasted Coconut Shavings nestled between layers of Orange Infused Mascarpone Cream.



The restaurant also offers a 6-course Tasting Menu that includes a mélange of our best dishes, available with or without wine pairings.



3121 is proud to offer a changing seasonal menu along with our extensive wine list and specialty cocktails designed just for us, designed by Executive Mixologist, Anthony Alba.



3121 is located behind the High Limit Slot Salon. Three private dining room choices that seat up to 14, 50 and 60 are available. Live music will be performed on Wednesday, Friday and Saturday Nights.

I ate there about 3 times and also had the 6 course meal before one of the shows. Most everything was delicious. Even had sorbet with brie poured over it. I thought I would hate it but I loved it. The most delicious thing I had there was the black cod and fried rice.

Well, Prince wanted a place to eat right away so they arranged a compromise. Fiore is going to open back up when he is gone so they changed the name and added some items to the menu but kept some Fiore favorites on it. But it used to be a smoke hole....look below....

That's what I had and it was fabulous! My friend had a rib-eye which was excellent also.
