Pancakes, French Toast or Waffles???

Being that I am starving this morning and need to get some breakfast.. I thought of a food thread.. Which would you rather have for breakfast.. French Toast, Waffles or Pancakes? Or maybe none of the above??
My choice is .. drooling

1½ cups skim milk
1 egg
Nonstick spray coating

Repeat with remaining batter to make 15 crepes total. Brush skillet as needed with shortening between cooking of crepes.

For filling, in a blender container or food processor bowl combine cottage cheese, egg white, sugar, orange peel, orange juice, and cinnamon. Blend or process till smooth. Spoon about 2 tablespoons cheese mixture onto the unbrowned side of each crepe. Fold 2 opposite edges of crepe over top of filling. Fold in remaining edges, forming a square packet. Repeat with remaining filling and crepes.

Spray a shallow baking pan with nonstick coating. Arrange blintzes in pan. Bake in a 350° oven 15 to 20 minutes or till heated through. Serve with Strawberry Sauce.

echk!!! Not a fan of cottage cheese.. I thougth Ricotta could be used too.. Either way, I am not sure if I would like them

Stuffed French Toast with Rasberry Sauce



FILLING:
3/4 cup ricotta cheese 1 package (3 ounces) cream cheese -- at room temperature
1 teaspoon almond extract
2 tablespoons sugar
1 loaf French or Italian bread cut in 1 1/2-inch slices
8 eggs 2/3 cup half 'n half
1 tablespoons butter


SAUCE:
1 package (10 ounces) Deluxe Red Raspberries
thawed and drained (reserving juice)
1 /2cup sugar
2 tablespoons raspberry jam
In medium bowl, combine ricotta, cream cheese, almond extract and sugar; stir until well blended.

Make a pocket in each bread slice by cutting through center of top crust down into bread to within ¾-inch from edges, being careful not to cut through sides.

Fill pocket with 1 to 2 tablespoons filling. Repeat with remaining bread slices.

In medium bowl, whisk together eggs with half 'n half until well blended. Dip each side of bread into egg mixture until well coated.

Melt butter in large skillet over medium-high heat. Place bread slices into skillet and fry both sides until golden brown and filling is warm, about 6 to 8 minutes.

In medium saucepan, combine reserved raspberry juice and sugar; stir in raspberry jam. Bring raspberry mixture to a boil, then lower heat and simmer for 7 to 8 minutes,allowing mixture to slightly thicken. Remove from heat and stir in raspberries.

Serve warm over french toast.

I'd take a plate of chicken n waffles from here.They pan fry the bird and give you some homemade waffles on a plate,then just pour syrup all over everything.Off tha hook.

Pancakes are good but they take so long to make, whereas you can just slap the eggs and bacon on the oven and - voila! - instant breakfast. drool

They have a pancake mix now that you just add water... and mix and cook.. no time at all.. As a matter of fact, I made them Sunday morning and it took a total of about 10 min... I think they were hungry jack pancakes!

In general I'm a waffle kinda gal. But there are 2 different brunch places in Mpls that serve the yummiest French toast that everything else pales in comparison. One is made with a nice, crusty french bread and stuffed w/Brie and is covered in syrup and bananas and pecans. YUM! The other is a regular but hearty white bread dipped in egg and coated w/cornflakes and cinnamon and suger. Sounds weird, but it's super yummy. drool
