I think you should have Pancakes with Strawberries on the side...Just use Whipped Cream instead of syrup..And a nice glass of OJ...That sounds good...I might have to have that for breakfast> | |

make this recipe (it's my new favorite)
from "Moosewood Restaurant Cooks at Home" Saute 1/2 cup chopped onion for about 5 minutes until softened in 1-2 teaspoons vegetable oil (I prefer EVOO). Add 1/2- 1 cup sliced and/or diced mushrooms and an herb of your choice (a pinch of dried or minced fresh marjoram, thyme, or basil) and continue to saute, stirring frequently. In a small bowl, beat together a dash each salt and pepper, 6 egg whites, and 1 tablespoon water with a fork until frothy. Pour evenly over the sauteed vegetables and cook on low heat until the egg whites are opaque and almost firm. Sprinkle grated cheese on top (1/4 - 1/2 cup cheddar, Swiss, Jarlsberg, Monterey Jack, or mozzarella). When the cheese begins to melt, fold the omelet in half and cook for another minute. Slice the folded omelet into two pieces and serve immediately (or later Makes two servings. Per each: 262 calories, 17.4 grams protein (about 35 percent daily value), 17.9 grams fat, 7.7 grams carbohydrate, 302 mg sodium, 440 mg cholesterol. Note: less oil will be necessary if a nonstick skillet is used. Also using a "lite" or lowfat cheese will further reduce the fat and cholesterol of this dish. You can also use bell peppers instead of mushrooms. I sprinkled two minced garlic cloves on top just before the cheese and used feta as the cheese and enjoyed that the most. | |
