Good Chicken Recipe - anyone got one?

ok so this girl that i'm trying to woo, is coming over tomorrow night for dinner, well it's not confirmed yet, but if she does i need a good chicken recipe. i figure a chicken dish is kinda neutral and not too serious of a dish to prepare.
see it's part of my plan - last week i gave her a copy of The Gold Experience (cuz she wanted it, thanks Jamadeus, cheque is in the post) and now i'm going to try and woo her with food.

What ever you do...KEEP IT SIMPLE!!! To fancy and you will be to worried about it being cooked all the way and tasting good. Simple chicken breast with rosemary and some rice pilaf and asparagas. and a good white wine (if you drink)

JDINTERACTIVE

Low fat chicken tikka

Ingredients

4 chicken breasts
Basmati Rice
2 cloves of garlic
1 onion
Natural Yoghurt
Curry Powder

Preparation

1. Cut the chicken breats in2 cubes. Mix in2 a bowl along with the 2 garlic cloves, 4 tablespoons of natural yoghurt and 2 teaspoons of curry powder. Add more 2 add strength 2 the curry.

2.Allow 4 the sauce mixture 2 marinade the chicken 4 15mins.

3.Fry the chicken in the pan until the sauce has been absorbed in2 the chicken.

4. Chop up the onion and add 2 the pan.

5.Cook the rice! Of cause!

6.Serve nice and hot.

U may like 2 add a Naan bread, or popadoms as a nice compliment.

Try this one Milty:

Just make the following modifications:
Try using different sauce. Eggplant needed may be out of proportion to too much. One eggplant may likely be enough for two people. Strongly suggest try salting the eggplant 20 minutes and washing off in cold water to remove bitterness. Better leftover.

It tastes incredible (it's ranked among the very best on that site, in the hall of fame) and it's a dish most peeople like, pretty neutral, plus it's baked, not fried which she'll probably appreciate as most girls would.

I think it depends on how large the chicken breasts are. But again... I am not allowed near the oven and I don't know how to cook meat. Just ask the butcher how long and at what temp. (don't forget to have the skin removed.)
All the luck in the world!!! another idea is to have her there to help. We sort of like that. Being in the kitchen together is fun in all sorts of ways. OH yeah I almost forgot. The man at the liquor store can help you with the wine (just go to a real store not the local joint) and the pilaf you can get instant if you aren't that sure of how, it will be fine I promise!!
