Soup Survey

I run a little cooking show on the internet. It's still sort of soup season, and I love me some potato soup. I love roasted vegetable soup too.

But I thought I'd ask you guys - what is your favorite soup that you make at home? Beef stew? Chicken noodle? Split pea? Anything - let me know. I'm fielding ideas for a couple of shows.

I make a fantastic beef and potato stew. I'm really quite proud of it. I only do it for special occasions though. The soup I do the most is a very simple chicken and vegetable soup. If I do a roast chicken, I'll use the juices that are left in the tray and mix it in with blended vegetables, add a bit of black pepper and you've got something to keep the cold out on winter nights.

I save the carcass etc when I make a whole chicken (which is often), and make chicken stock. I have 2, sometimes 3, 6-qt dutch ovens going with herbs & vegetables, simmering away for about 4 hours. I strain it, let it cool, skim the fat off top, then freeze most of it. I love having it on hand for risotto, soups, or whatever. I save every end of a carrot, celery, onion, onion skins, stems to herbs, etc to use in a stock. Nothing goes to waste.

I do love a good beef & potato stew, though, when the meat is really tender, the potatoes haven't disintegrated, mmmmm.

I make a yummy soup with Spanish chorizo (different flavor profile than southwestern chorizo), chicken, tomatoes, red peppers, and kale. It is seasoned with onions, garlic, smoked paprika, saffron and thyme.

We don’t mourn artists because we knew them. We mourn them because they helped us know ourselves.

I like to make my own potato soup because I like it kind of thick. With bacon. And sometimes broccoli. I hack up the bacon and cook that first so I can use the fat to make the roux that will be the base for the creamy soup. I like rustic rough chopped potatoes with the skin left on. And sometimes broccoli.

I'm not a huge soup person, though, so if I do a soup, I want a stick to your ribs variety, not so much a thin, watery thing.
Murica: at least it's not Sudan.

You're speaking to me...full on, at 432Hz right now.




OMG roasting the potatoes first with olive oil, kosher salt, and pepper instead of boiling them? And adding them to the soup toward the end. Is all the difference between "hey, this is pretty good potato soup" and "I would do morally questionable things for some of that soup." Pretty much roasted bacony potato soup. And sometimes broccoli which I also like roasted (in general and in the soup).
Murica: at least it's not Sudan.

My favourite soup that I make at home is oxtail, it's absolutely gorgeous and is miles better than the stuff in a can. It takes about 3 days to make i all but it is well worth it. Whenever we're having a family gathering at ours during Autumn or winter I get told I have to make a big pot of it.

Dip some home made bread into it and you've got sticky, meaty perfection.


You ought to try it smile if anyone wants my recipie then let me know.

Roasting vegetables instead of boiling them is, by far, a superior way to get flavor. You boil flavor out, you roast flavor in. I actually roast my vegetables for roasted vegetable soup, then pulse them in a food processor so they're coarse (with a little chicken stock), and almost make a mash. Then add all that to the pot, add more stock and cream or creme fraiche, and build from there. The mash is almost a concentrate, and you loosen it up from there.

For the potato soup, try cutting some shallots, then frying them in a pan for about 40 minutes, slowly, until they're nice and brown and crispy to top your bowl of soup with. It beats those fried onions in a can.
