i like a good basic buttermilk with a little baking soda, baking powder, pepper, salt, an egg, and some hot sauce! Flour--batter--flour on a cake rack in the oven into a warm over for a bit to dry .... then into the oil!

or for wings just some salt and pepper maybe some hot pepper powder... and fry with no flour
