Saturday: Geek Pastitsio (with spelt pasta) and a mixed Greek style salad
Sunday I cooked for church...300 people with assorted crowd size dishes (none that memorable)...but as Potluck fellowship goes quick and by the time I'm done serving and Old Dude is done shooting the breeze after playing...the food is gone, and we just cook at home. So Sunday dinner was fennel crusted pork roast (all that talk of fennel with johnart, I had to give in to te craving )
and for lunch today, the leftover pork was used for focaccia panini sandwiches with white balsamic drizzle. The foccacia I made last week (using spelt flower) froze really well, so that came out today and the sandwiches actually came out good. I love balsamic reduction on everything from roasts to salads and fruit, and lately, I'm into the white ones even more than the reds:
