Here's a fantastic specialty recipe
for garlic soup from the Casa del Rio
Bed and Breakfast, Abiquiu, New Mexico


Ingredients:
1 large head garlic cloves
salt
pepper
1 whole cloves
1/4 teaspoon sage
1/4 teaspoon thyme
1/2 bay leaf
some sprigs of parsley
3 to 4 Tablespoons olive oil
2 pounds diced potatoes


Drop head of unpeeled garlic cloves into about 2 quarts of boiling water for about 1 minute. Drain and run under cold water. Peel. Put the garlic into 2 quarts of boiling water, along with 2 teaspoons of salt, a pinch of pepper, the cloves, sage, thyme, bay leaf, olive oil, and parsley. Simmer 1/2 hour.

Strain soup. Press liquid out of garlic cloves and discard. Return soup to pot and add diced potatoes. Simmer about 25 minutes. Correct seasonings and serve with French bread and grated Swiss or a good Parmesan cheese.

I love garlic too...I actually find the smell of garlic on someone to be very attractive. smile
Also, it's very good for you. My father always called it 'Russian Pennicilin' and made either garlic toast for us if we were sick, or we ate cloves of it raw...it really does have anti-biotic properties. http://www.naturalfacts.c...arlic.html
And, ironically, it's the substance (allicin) that creates the smell that has those properties. So, if you buy non-stinky garlic tablets it's going to do you no good.
Not to mention, they don't taste good like the real thing!

That is sooo cool! big grin I was introduced to garliuc at an early age, my Mum is a very good cook and very experimental, so i always try new things...


What is also cool about this thread - even though I say it myself is it proves that us Orgers can talk about subjects without mentioning sex and viloence!

Here's another garlic delight...
Broiled Lemon & Garlic Tiger Prawns

Ingredients
1 1/2 pounds tiger prawns, peeled and deveined
1 cup butter
1 teaspoon minced garlic
1 1/2 tablespoons lemon juice
3 tablespoons grated Parmesan cheese


Directions

1 Preheat oven on broiler setting. With a sharp knife, remove tails from prawns, and butterfly them from the underside. Arrange prawns on broiler pan.

2 In a small saucepan, melt butter with garlic and lemon juice. Pour 1/4 cup butter mixture in a small bowl, and brush onto prawns. Sprinkle Parmesan cheese over shrimp.

3 Place broiler pan on top rack, and broil prawns for 4 to 5 minutes, or until done. Serve with remaining butter mixture for dipping.

(though, I tend to put more garlic in big grin)

I eat garlic 6 days a week.
Usually with whatever I'm cooking, sometimes raw.


It's healthy, it adds to the flavor of most any food.
I don't remember-
nor do I want to remember-
my life before I became enamored with.. garlic.


Years ago, for a while, I did have this "thing" about not wanting to eat garlic if I thought I would be around others (mainly women)
but after living in a certain Western European country for almost 2 years..
I got over that self-concious nonsense!


Garlic is in the recipe
for whatever I'm eating tonight, too.
I'll see you tonight..

I love it on salmon - a friend of mine has a fabulous marinade recipe with olive oil and lemon juice and I'm not sure what other spices. But it is so tasty!!
