ALL ABOUT FOOD!!!!!

I know some of you like to bake men and women alike....lets be real here...the holiday rush is coming and Thanksgiving Day & Christmas in the USA is just around the corner(and for those around the world in numerous countries idk if u all celebrate the same holidays as USA) if u like what r ur favorite dishes u only make for those certain occations ..u can post pics and/or just say what u make every year for the occation

Ill start:

For work we have a small potluck I bring in this:

Little Smokeys wrapped with Bacon and Brown Sugar

Chocolate Covered Peanut Butter Balls( Sugar Free) aka Buckeyes

For family:

Sugar Free Brownies

Crab Meat Cheeseball

Chocolate Covered Peanut Butter Balls(Sugar Free) aka Buckeyes

( In my family we have diabetics as I am one myself, so i try and include sugar free stuff for us too)

Sugar Free dont nessasarily mean tastless food but its a work in progress smile

I have never heard of 'Chocolate Covered Peanut Butter Balls( Sugar Free) aka Buckeyes'.

99% of my posts are ironic. Maybe this post sides with the other 1%.

ooooo drool they are YUMMY!!! im addicted to them if they are sat in front of me.....ill find the recipe and the pic as well for those YUMMY PB Balls drool ( this maybe a edited post hehe)

Peanut Butter Ball Mixture

2/3 cup homemade or natural peanut butter, smooth or crunchy

1/4 to 1/2 cup coconut flour, as needed

2 Tablespoons sugar free honey
Chocolate-Coating, if desired (see recipe below)

Mix peanut butter and honey (or stevia) with coconut flour, using just enough flour to form a firm "dough" that holds together.

Roll into 1-inch balls and place in freezer for several minutes to firm up. Dip in chocolate if desired (see recipe below), then freeze again until chocolate is hardened.

Store peanut butter balls in fridge or freezer, as desired.

Chill your dough AFTER you form it into balls.

Chocolate Coating:

3 ounces unsweetened baking chocolate , chopped

1 Tablespoon virgin coconut oil

2 to 3 Tablespoons sugar free honey

1/2 teaspoon vanilla extract

Melt the coconut oil and chocolate in a double-boiler. Add honey (or stevia for sugar-free*) until desired sweetness is reached; stir in vanilla extract.

Dip peanut butter balls in chocolate, gently swirling around with a spoon to coat. Then using a fork remove chocolate coated peanut butter ball. (Do not pierce the ball, but just gently lift out of the chocolate letting the excess chocolate drip off.) Follow remaining instructions in the recipe above


Instead of getting your fingers into the chocolate with a short little toothpick or dropping the dough into it with a slick spoon or your fingers, Just use a Shishkabob skewer.. Wooden or metal....... Your fingers are well away from the chocolate AND the well chilled dough does not drop into the dipping chocolate which may happen with a spoon or your fingers.I make these as a Holiday tradition for my family and friends.

Zombiekitten, I hear you.

However, this recipe fit the diet, doesn't it?

Because I eat peanutbutter with all natural marmelade on my rice crackers, because it's a save choice.

I use Vita D'or for peanutbutter, there must be good ones in Australia too, right?

This is the only way I like peanut butter other than with jelly on a sandwich. Peanut butter and chocolate were made for each other! highfive Oooo Oooo, I also love those Tastykake Peanut Butter Kandy Kakes. Jeez, I could eat a dozen of those in one sitting.

Ok some time for some yummy Jello salad recipe

1 pkg sugar free or regular Jell-O( any flavor u like)

1 sm. can of crushed pineapple(or if u want the chunks ur choice)

1 sm pkg crushed/chopped walnuts

1 container of whipped cream

Make Jell-O as directed on package ...Take out of fridge and break up if ur using a bowl( if wanting to make Jello squares make it on a deep cookie sheet like u would Jell-O jigglers) ....add walnuts and whipped cream(thawed of course) add pineapple..(see note at bottom).. serve ...refridgerate left over Jell-O salad

WARNING: pineapple juice and itself will make the dessert watery if added too much ...if u like keep it out and add to individual servings...

Crabmeat Cheese Ball:

2 pkgs cream cheese

1 small pkg imitation crab meat(uncooked and chopped finely)

1-2 TBS Worcestershire Sauce

2-3 TBS Seasoning Salt( season to taste, dont want too salty)

1 TSP Onion Powder

1 TSP Garlic Powder

2-3 TBS Minced Onion(in spice section)

1 pkg shredded chedder cheese

In a big bowl leave the cream cheese out to soften( or u can put in microwave for a few sec but DONT scorch it about maybe 15 sec at most), add seasoning salt, mix, and set to side.

Finely chop the imitation crab meat or u can do this in a food processor/chopper as well add to cream cheese and mix together. Then add the onion powder, garlic powder, minced onion and a small amount of shredded chedder cheese(save some chedder cheese for the outside or top).u may taste with Ritz crackers but if u use too much seasoning salt itll become too salty.

Then when seasoned to taste, u may put it in another bowl sprinkle chedder cheese on( u can gently press the cheese into the top if u like) top and cover.

If making it into a cheese ball then shape ur cheese ball to width and roundness to ur liking and roll or press cheese where u need it.

Put in fridge to chill and firm up and ENJOY!! drool
