Savory oatmeal recipes I'm trying to up my oatmeal intake, but having it too often for breakfast gets awfully boring. I've been thinking of switching things up and having it for dinner, or at least as a side dish with veggies mixed in. Coincidentally, the NY Times ran this "Oats for Dinner and Dessert" article (http://well.blogs.nytimes...d-dessert/) a couple days ago, so I thought the time was right to see if orgers out there had some suggestions they'd like to throw out there.
The torta at the Times link looks amazing, but it also looks like a pain to make. I think I'm going to start simpler. Anyone experimented with savory oatmeal and have any recipes or tips they'd like to share?

I wish I could eat oatmeal. I love it...but it doesn't love me. We don’t mourn artists because we knew them. We mourn them because they helped us know ourselves.

Genesia said: I wish I could eat oatmeal. I love it...but it doesn't love me. I got obsessed with it after I watched Alton Brown's excellent and painstaking show about it. But now I need to spice it up a bit, because it's not as satisfying in the morning as it once was.

Isn't oatmeal one of the components of haggis? We don’t mourn artists because we knew them. We mourn them because they helped us know ourselves.

I read the title as "Ovary"!
I hate oatmeal. I'd almost rather starve than eat it.
When you say "savory" are you referring to making it tasty or using savory flavors i.e savory vs sweet? 2010: Healing the Wounds of the Past.... http://prince.org/msg/8/325740

I enjoy watching him, I learned a few things.
Unfortunately like Genesia and a lot of other folks, oats DO NOT like me so I avoid completely. All I can think of is oatmeal for breakfast and oatmeal cookies. But it's a grain so there definitely are other things that can be done with it. Probably unrolled it better for dinner dishes.

I'm talking about savory flavors. I'm going to start with a basic dish, which I've seen on a few websites already: I'm going to saute some chopped onion, and meanwhile I'm going to boil the steelcut oats in vegetable broth. I may throw in some mushrooms, too. I've got some nice salmon to go with it. My cholesterol levels are going to be 30 points lower this evening; I can just feel it.

Parmesan is often suggested. Ricotta too.

If it were possible to fart cholesterol, a bowl of oatmeal would drop me to 160, easy. We don’t mourn artists because we knew them. We mourn them because they helped us know ourselves.

I'm a sweet oatmeal person. One of my favorite ways to eat it is by:
Preparing it with milk instead of water (non-fat works great) Add approximately one tablespoon of brown sugar add walnuts, pecans and almonds top it off with a few dried cranberries
Another favorite thing to do is prepare the oatmeal as usual (preferably with milk) Take a banana and chop and "fry" them in a skillet with either Earth Balance soy butter spread, or by just spraying some pam in the pan. Season the bananas with cinnamon and brown sugar. Pour the fried bananas over the oatmeal and top with some walnuts or pecans.
If you don't want to use the brown sugar, brown sugar splenda works well also. You can also sub the sugar for agave nectar. I prefer the vanilla agave.
I'm like a lot of you, I'm not a huge oatmeal person, but the older I've gotten, I know that I need to eat it. **--••--**--••**--••--**--••**--••--**--••**--••-

I think you can use it like flour also (if you chop it in a food processor). I have an aunt that does this and she makes pancakes out of it as well as different types of bread. **--••--**--••**--••--**--••**--••--**--••**--••-

Works with rolled wheat and rolled barley too.

Just in case anyone's curious: The oatmeal-as-a-side-dish experiment was a huge success! I cooked it in veggie broth and mixed in carmelized onions, and it was delicious.

Sounds like risotto - only with oats. Risoatmeal? We don’t mourn artists because we knew them. We mourn them because they helped us know ourselves.

Kind of--it had that texture. Truthfully, it really rocked. Didn't taste like oatmeal at all (I like the taste of oatmeal just fine, but I didn't want it to have "that" flavor as a dinner dish). But the nuttiness of the steelcut oats was perfect. I am now excited to do some more experimenting with it.
