VEGGIE Ricipes

OK, for you non-vegitarian/vegans, I'd love your veggie recipes too. I mean, you don't have to be a vegan to enjoy a good veggie recipe, so I'm sure you guys have some delicious ones too.

The one I want to share is an absolutely delicious RAW vegan recipe that I just made today. I actually created it myself when experimenting with ways to mimic my favorite Thai dishes. I'm very familiar with them as it is my heritage, but Thais are regretfully not into the whole vegan thing. So, after some trial and error, I perfected a recipe that I think taste better than the meat variety.

I went back to being 90% raw vegan again. My first stint was about 4 days ago, and have forggoten what a joy it is to prepare your own food this way. I would have stayed raw vegan if not for my expenses and having been laid off. HOwever, now I've reached a point in my life that things are stabalizing, and I have few excuses not go back to being at least 90% raw vegan.

Anyways, here are the ingrediants: [I don't specifiy raw in case you don't want to do it raw--the cooked nuts are just as delicious]

1. Walnuts (about half a cup)

2. Cashews (about half a cup)

3. 1 lemon grass stalk chopped

4. 1 kaffir lime leaf (Asian market--if you don't have it, no worries)

5. 5 mint leaves

6. 1 small red onion

7. 1 clove garlic (or more to taste)

8. soy sauce

9. Olive oil

10. 1 pinch of cumin (or to taste)

11. juice from 1 lime (or 1 1/2 if you don't have kaffir lime leaves)

12. honey (to taste)

Optional

1. 1 or two white mushrooms

2. 1/4 cup of carrot

3. 1/5 cup of celery

4. Thai chili

Combine all the ingrediants except your liquids (lime juice, soy sauce, olive oil) into a food processor, and BARELY process it. You should have a mixture that is grounded up but has interesting chunks and texture in it--don't puree it into a mush. It should resemble the meat variety:

It takes about 2 seconds to mix, and you should serve immediately.

It's best eaten in a lettuce wrap, or red cabbage rap. It's absolutely flavorful and AMAZING.

vegan chocolate & banana fudge brownie

* 2 1/4 cups of wheat flour

* 2 cups of sugar (I like crystal sugar)

* 2 teaspoons of baking soda

* 1 teaspoon of salt

* 1/2 cup of chocolate chips

* 1/2 cup of (any) oil (try olive oil...)

* 1 1/2 cup of water

* 4 teaspoons of apple cider vinegar

* 1 ripe banana mashed well (any size, any tipe will do)

Combine all the dry ingredients and the chocolate chips and mix well. Mix all the wet ingredients together, plus the banana.

Pour the wet into the dry ingredients and mix well.

Pour the batter into a pan which is greased (with olive oil) and dusted (with flour) and place it in a preheated oven. Bake at 170 degrees C for about 15-20 minutes or till the top looks cooked. Now I cooked it till the tooth pick inserted came out clean but if you want the brownies to be gooey you can leave it slightly undercooked.

a thing I did with everything that's in the refrigerator during a cold day. haha.

* Zucchini ('bout half a cup)

* Carrots (bout half a cup)

(bout half a cup of everything, really.)

* Broccoli

* Tomatoes

* Potatoes

* about 1 teaspoon of salt

* about 1 tablespoon of tomato sauce

* pinch of black pepper

* pinch of oregano

* pinch of basil

* 1 small onion chopped up and fryed

* 2 cloves of garlic, very well chopped up and fryed

* 1 tablespoon of white wine vinegar

* half a cup of hydrated soy meat

* 1 cup of water

* olive oil

* chopped olives

* red peppers (if you'd like)

just cook everything together, starting with the onion and garlic, then add the soy meat and vinegar, when it starts to get dry you add the water and all the rest of the ingredients until the water evaporates.

(I forgot to add some things. silly me.)

Roasted spagetti squash with red sauce.

Cut squash in half, clean out seeds and stuff. Brush with olive oil. Sprinkle a little sea salt & pepper. Put in preheated over 400 F cut side down for about 45 mins. or until fork goes through but still tender.

Scoop out spagetti squash, add your favourite red sauce and shave some parmesan cheese on top.

Enjoy!
