I love soups and I wish they were filling enough to be a main course on their own.
Some of my favourites: lobster, jerusalem artichoke, aspargus, chicken and corn, any Chinese soup. | |

I like all kinds of soup, especially homemade chicken soup, fish soup, vegetable soup and exotic soups like iskembe (pronounced ishkembe) but mercimek lentil soup is the one that I make very often. I add carrots, onions and a bit of hot chilli to it. I use a blender to get a rich, thick, creamy texture. A bit of chicken stock is also fine.
And I must admit I like ramen, good old cheap ramen. But it has to be a good brand. The VERY cheap one are full of MSG and sodium. This is what my mom's homemade soup looks like;
When I was a kid, I HATED it with a passion!
Now, I crave it.
It's like a beef stew w/ all types of veggies (potato, plantain, cabbage, squash, corn-on-cob, etc.) and right before you eat it, you put spoonfuls of white rice in it. A dash or two of hot sauce makes it even better.
I could go for a bowl right now. By St. Boogar and all the saints at the backside door of Purgatory! | |

That Turkish lentil soup looks fantastic. I'm going to google a recipe for it. I love creamy pumpkin soup and curried kumara soup (a sweet potato from new Zealand). I don't like chunky soups like minestrone or vegetable but if you have a cold go get a Jewish mama to make you chicken soup. Shamon motherfucker. I make an awesome minestrone which is pretty much a meal in itself. With some crusty bread it's all you need. I love pea and ham too. I very much love Thai soups too, tom yum and tom ka gai a whore in sheep's clothing | |

Ohmigod. My partner brought me home this incredible cream of broccoli soup that they served in the first class lounge where he worked and I literally shivered with pleasure from eating it. I never realised soup could be so good!
I had a yummy bean mix soup last night with garlic bread. I make up a huge pot every couple of weeks and freeze a few portions. So easy to do. I always have some soup mix in the cupboard so I soak some overnight. I'll fry up some onion and spices in some olive oil, add a few cans of beans (Borlotti, chickpeas, butter beans, kidney beans whatever) a can of diced tomatoes, chop up a potato and a carrot, maybe some celery. I've recently discovered frozen spinach so I'll chuck that in. I love that it keeps well. I can't do without soup. | |

Ex-Moderator | Soup can totally be a meal! Pair it with a nice bread and it’s all I need. Stew or chili with cornbread, hearty root veggie soup with a crusty baguette. YUM!
My favorites are a vegan root vegetable chili with lentils, coriander carrot and sweet potato soup, spicy squash, the other day I made a spicy carrot and banana bisque with a coconut milk reduction garnish. I make all kinds of veggie soups in the winter. |

Chicken soup contains something (cysteine?) that is supposedly VERY effective against a cold.
I make the lentil soup by boiling red lentils in water, no salt added, just the lentils and water, and some carrots. After 20 minutes, I put everything into a blender and blend it until everything is creamy and like a thick broth. Then I sautee some onions in butter or olive oil until the onions turn slightly brown, or golden. Then I take the onions out of the pot and add more butter and a cup of flour. Turn up the heat while stirring, until the flour turns slightly brown. Make sure you stir it well. There will be little crumbs but that´s ok.
Put the onions back into the pot with the flour, add some chicken stock if desired, some salt and paprika flakes, maybe a spoonful of tomato paste, but don´t overdo it, otherwise the tomato will be too dominant. You can also use vegetable stock or one of those readymade stock cubes but I prefer more natural ingredients...but a stock cube every now and then is fine. I don´t always use chicken stock and it is not necessarily needed for an authentic mericimek soup but adds a lot of flavor.
Stir well, add a bit more water. Cook for 15 minutes.Use a blender again or one of those handheld blenders, you know, those sticks with a sharp propeller? Blend until the onions are pureed.
Serve with a dash of lemon juice, a few drops of additional olive oil, a little bit of chopped parsley and some freshly ground black pepper and/or paprika flakes. Tastes best with pita bread.
This is my own creation based on what I´ve learned from my mom but there are dozens of other varieties.

Two cups are probably a bit too much for one or two people because the lentils increase in size and then you end up with a very pulpy soup, especially if you want to reheat it the next day (though you could actually just add more water then). It depends on what kind of texture you like. Some make this soup very "watery", and others like it a bit more thick and heavy. Definitely serve it with a dash of lemon juice and some freshly ground/crushed pepper and paprika flakes though. And maybe a spoonful of chopped parsley. I don't think we can get paprika flakes here. Just ground. Maybe I'll use chilli flakes or ground paprika or a combo of both. I'll let you know how it goes.
