Mmm Mmm, yummy- just having my pancakes for dinner. I usually make crepes & chef up a tasty dish called Crespelle alla fiorentina, thin crepes filled with a creamy sauce of spinach, onion & parmesan, put in a dish & covered in béchamel sauce & Parmesan & cooked in the oven until golden. It's delicious. But tonight I experimented & made the crepes with a creamy filling of leeks & Aberdeen Boneless (finest Scottish smoked haddock), served with a little salad of watercress & red onion. Holy smokes it's a taste sensation! I love Shrove Tuesday! | |
