I have actually made ice cream with bacon chips in it - and it's pretty good. (I still want to make peanut butter ice cream with bacon brittle sometime. I think that might be insanely yummy.)

That is the whole key to marrying bacon with anything sweet. You really have to get it crisp. And even then, you don't want to chip the bacon so small that you have pieces that are just fat. Because that part will go soggy and be very unappealing.

When I used bacon in ice cream, I put it in the same base I'd use for butter pecan. That sort of brown sugar-y flavor was really good with the bacon.
