There's a million variations, but in essence it's eggs (sunny side up?) with salsa, accompanied with tortillas and some form of beans.

that looks TOO tasty!!! drooling The first time I ever had Huevos Rancheros I was 16 and in Mexico I think it's been a good 12 years since I last ate some!

Just about any old way. I love eggs.

Over easy, scrambled, in an omelet, a frittata, hardboiled, poached, whatever. Those things are delicious. And without them, we couldn't have the tasty cookies, cakes, brownies, pancakes, French toast, and more that I love so much.

Thanks for sharing. I like omlet or scrambled, usually plain though I don't always get the butter right (I'm a horrible cook but want to improve). Sometimes I'll add mozarella cheese and mushrooms, and on occasion, onions and red or green peppers. I'll have it alongside two pieces of toast. And last not least, I sprinkle on black pepper, and lots of it.

I also like hard boiled eggs with toast, and sometimes with rice.

Any suggestion for making the egg taste better? I add milk to my omlet mixture with some black pepper.
