I'm not really big on soup.
Growing up, when my mom made "soup" it looked like THIS;
At the time I HATED it!!! Now I can't wait for her to make it...!
Right now my favorite (eaten regularly) is "baked potato soup" from Houlihan's
When I was younger I had something called "Sopa de Tapado" in Honduras.
...it's a very hearty stew/soup with plantain, yuca, dried beef, coconut milk, and a bunch of other yummy stuff. After eating a bowl of this, you don't need to eat for DAYS.
They also make a seafood version, but I've never had it. I imagine it's somewhat like the "trademark" Honduran dish; Conch Soup.
I haven't found anywhere around here that makes it (...and we've had an explosion of Honduran eateries on L.I. lately). By St. Boogar and all the saints at the backside door of Purgatory! | |
