Last night I had a huarachazo for dinner:

It's a masa cake filled with beans and topped with tomato, onion, radish, peppers, mushroom, avocado and a bit of cheese and sour cream. (Normally it has meat on it too, but I leave that out.) And red and green salsa on the side. YUM!

And I had a bit of trifle from the super awesome bakery in my building - chocolate cake pieces w/salted caramel sauce topped with chocolate mousse and sprinkles of chocolate chip cookies. double YUM!

This morning I had a boring breakfast of cereal and greek yogurt. I have a wedding reception this afternoon, so not sure what all that will entail.

It looks so good, but I did have to look up masa cake, though boxed

So it's a flattened cormeal/ cornbread cake! I think my mom's relatives in the Deep South used to make something similar called a "Johnny Cake", they're usually fluffier- but in my mother's family they always made them flatter so they could throw stuff on top of them! geek

Carrie...that looks amazingly delicious! drool

Ottensen...masa is different than cornmeal.

The cornmeal that we're accustomed to in the US is made from corn so it's sweet. Masa is made from maize, so it's usually prepared savory. I don't think that maize is really used for cooking here in the USA.
The Amish woman who took us on a horse-&-buggy ride explained the difference like this;

Corn is what you eat with butter, Maize is what we feed the cows to make the butter.

They just opened up one of these by my job;

...I stopped by after work today and ordered ribs & wings platter for my dad, and a "Screaming Nacho Burger" for myself;

Needless to say I am sitting here in a food coma and probably going to take a nap.

I'm starving but don't have much on hand. It's cold and blustery here today so I'm hibernating inside; I'll have to venture out to the grocery tomorrow. Ugh. Tonight I'll probably just have leftover lentil soup -- it was made a few days ago so the flavors should be even better now. Tomorrow will probably be goat cheese - potato - leek pizza. drool

I am po' so my brokeazz isn't eating out with the kiddies...

we stayed at home and I cooked.

Its has been rainy and sorta raw so I made homemade chicken soup yesterday and pot pie with the leftovers today for dinner... that Jiffy cornbread on the side. I love the sweetness of it, and th'lle plus is that the kids a want a plain piece of fruit for dessert (oranges/apples/plums).

I had some left over rice with peas (Rican orange rice), ground beef I browned up with a bit of tarragon, and shredded cheddar... the ingredients for layering in my stuffed bell peppers for today's lunch.

Saturday's breakfast was wholewheat buttermilk pancakes (homemade... I don't play) with chocolate chips, topped with confetioner's sugar and fresh whipped cream and crisp bacon on the side.

I took mine's without the chocolate chips... and a TALL cafe con leche lol

Sunday breakfast... it'll be smoked salmon, creamcheese, capers, onion, tomato on top of bagels with scambled eggs on the side....

and Sunday night.... the classic Waffles n Chicken OR baked mac n cheese n fried chicken & squash ... all homemade. The kids LOVE it either way.

foodnow Its cold and rainy... I'm all about comfort foods this time of year. cloud9

I always fel like I have to put stuff on top of my rice. Sometimes I#ll just grab any and everything green out of the fridge (kale, cabbage, broccoli, green onions) and toss it in the pan really quick with some ginger and soy sauce. Then I put a tiny dollop of some kind of Asian hot paste on top; like Sambal Olek or Japanese Yuzu paste...or some of that Thai chili paste I can spell or pronounce that has lemongrass smushed in it...that last one is hot as hell so I only use it in moderation!

So instead of spending extra money on chocolate, I bit the bullet and used the apples Saturday to make a Galette (aka Rustic Tart):

After laboring over the Indian food I was too lazy to get into labor intensive baking, so I picked up some phylo dough for 60 cents, peeled some apples and called it a night :

It was too easy to not pass up, and it was good with some tea in the evening lol

Anyone else here into whole wheat products? I've been pretty lazy this year with staying 100% on a whole food diet and I've lost my groove for cooking with whole grain flours. When I read paintedlady's post describing her breakfast it gave me the idea to bust out some whole wheat pancakes before we head out to church. With that wooden crate of fruit sitting on my terrace I thought I might as well jazz 'em up a bit and throw in some chopped pears and almond slivers.

Scrambled some eggs with chopped chives, cut up some mangos to have on the side, and now I need to get dressed to go praise the Lord..."ooooooh what a friend we have in Jeeeeeeeee... whistle whistle whistle "

lol

I bought a big bag of the whole wheat flour so I force myself to cook with that flour...

I made the pie crusts, and pancakes with it...

I noticed that the whole wheat flour (2 cups) is heavy... so for the pancake mix I add an extra egg (3 total-lg.- 4 med.), extra baking powder (2 tblsp.) and a bit of vanilla with the buttermilk (2 cups), salt (1/2 tsp) and a tblsp of sugar (no butter or oil needed in the mix) ...

your tart looks amazing... I may have to try to make one. drooling !!

I also noticed that when I make those pancakes, they stick to my ribs and I get FULL off of 1-2 med. sized pancakes yet they are delish. I make lots to... family of four.

now Zombie's idea of pizza crusts for the kids sounds like a good one, my kids owuld LOVE that with hotdogs and cheese. lol

Chile that ain't my tart...but I did wanna share some pics in case somebody else had some apples they wanted to use up lol

Yep, when i was at home in the states you could find so many ways to use whole wheat...but it's still a little bit of a novelty over here and I allowed myself to get lazy. That trick with the eggs for the pancakes sounds like a good one! I was ready to go back to sleep after I made those pancakes this morning ( I had 2), but...I couldn't lol

But anyhooos, there are lots of blogs out there with the cutest tart recipes, here's an easy one if you ever get in the mood...just substitute store bought pastry dough or pie crust to save time and effort:

I'm not hatin', I've done that before! It's usually buffalo mozerella on a rustic baguette, but it's still cheese on toast! lol

Actually here in Germany they have a food tradition called "abendbrot" or Evening Bread; when you're lazy or don't feel like cooking, you make a pot if tea, break out all kinds of bread and rolls and cheese and cured meats. We'll probably have that on Monday night.

I like to add baguettes and an assortment of cheeses. It's essentially the frou frou way of eating cheese-toast toast cheese

lol exactly.. i call it welsh rabbit (rarebit).. it sounds like i made more effort!! still cheese on toast! & there is no shame in abendbrot.. it sounds like a very civilized affair, & u are very classy with the laid table!!

we will eat on our laps, but do use a tray!.. very lazy!

That's not my table, that's a goople pic that came up for abendbrot. My taste in furniture isn't so umm, basic lol lol lol

But since I'll have something heavy for lunch, abendbrot is the game plan for tonight! Still need to pick up my baguette, though. We only have dark bread in the house, and I want some ham! Some brie, Spanish or Italian cured ham and then I'm good!
