nod After sticking the herbs under the skin, I season the chicken liberally with salt, pepper,& paprika (maybe with a little bit of garlic powder too). Then I massage a little margarine all over it so that all the spices become a little paste-like on the skin. This little mixture will help give the chicken that nice golden look. I bet that lemon thyme would be the bomb for this nod

I am in love with lemon thyme! Gotta grow more of that stuff next year. My oregano didn't do too well this year. I will replant more and just collect it as needed.

That sounds like good chicken. I have a bird ready for prep right now. biggrin Imma sear some asparagus tips and have jasmine rice and Rican styled beans to go with it.

I'm pretty sure I'll be posting another chicken dish tomorrow because we have hella leftovers from the breast. Since that's the part that takes the least flavor, I'll probably use it in a random stir fry for lunch tomorrow. foodnow

Gracias, I will give this method a try. I never seem to get it dry without deepfrying it, no matter how much kitchen tissue I use to dry it before grilling it, hence the rubbery texture I guess.

It's delicious if you get flavored hoummous, like roasted red pepper kind, or the broadbean and asparagus flavor that tesco does.

A bowl of cereal and a pear. Dinner hasn't come yet, maybe some bbq ribs, potatoe wedges and baby greens salad. Late snack maybe some cheese and triscuts, minus the salami slices pout I love the slice salami but ones gotta do what ones gotta do.
