Ideas please!!

Im making lunch today for my sister and daughter and since it is HOT AS FUCK outside I dont know what to cook! My grill is out of gas and I DO NOT wanna turn on the oven..

What should I make! I need to go to the store soon so if any one has any ideas pleaseeee post em!

Oh, I live in nebraska so the ingredients have to be fairly simple hrmph Oh, and it cant be fattening... lol

Make Pizzas!

Buy some ready made pizza crust at the store (or pita bread if you don't have crust).

Then buy some spegettie sauce (garlic works best).

1. cooking oil

2. chopped garlic (or garlic powder)

3. fresh basil, tomatoe sliced, mushrooms, and your choice of meats or pinapple.

4. black pepper and oregano

Spread a thin layer of cooking oil over the crust. Then garlic (And onion).

then very little of the sauce. Then black pepper (To taste).

Add the ingrediants (topings) you want and then sprinkle a dash of salt on top.

Make an experience of it. Have your sister or family add their own toppings to their portion of the pizza. The pizza bakes in about 20 minutes on high.

It's a fun way to spend with friends and family. I've entertained this way before and we all 'created' our own pizzas. lol

Dip & Salad thing.

Guacamole Dip

Taco salad (reduced-fat sour cream) you could pick up a baked/roasted chicken from a store.

Tuna salad severd with crackers

If you don't like processed meat, get a pound or two of roastbeef from the deli at your grocer. Serve the roastbeef on sometype of rye bread and serve half of sandwiches or finger sandwiches with or without the crust.

Dessert?

Ice cream and/or Shurbert with shortbread cookies.

Strawberries and whipped cream

Brewed tea with sliced oranges and lemon, chilled of course. smile

I did find a recipe for a roast beef sand with blue cheese and red onions I havent tried yet!!

Yes, potatoes, green beans and sun dried tomatoes. There's recipe here. Good with anything, but easiest with just a chunk of bread on the side. Really great for a hot summer, especially since no one wants to cook in the heat - and this is really easy to do.

Oh .. and by the way. You can still make a pizza, as Imago suggested, and on top of that you get to call it "Indian" too wink

Here's one, and here's a youtube clip (though I'd seriously cut down on the fat before I'd eat that) lol

Gazpacho soup was invented for the summer. Refreshingly cold on hot summer days, this adaptation of the classic Spanish cold tomato soup deliciously combines the best of summer vegetables. Make sure you only use the freshest, highest quality ingredients for this soup.

Gazpacho Recipe

  • Prep time: 15 minutes

Ingredients

  • 6 ripe tomatoes, peeled and chopped
  • 1 purple onion, finely chopped
  • 1 cucumber, peeled, seeded, chopped
  • 1 sweet red bell pepper (or green) seeded and chopped
  • 2 stalks celery, chopped
  • 1-2 Tbsp chopped fresh parsley
  • 2 Tbsp chopped fresh chives
  • 1 clove garlic, minced
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 2 Tbsp freshly squeezed lemon juice
  • 2 teaspoons sugar
  • Salt and fresh ground pepper to taste
  • 6 or more drops of Tabasco sauce to taste
  • 1 teaspoon Worcestershire sauce (omit for vegetarian option)
  • 4 cups tomato juice

Method

Combine all ingredients. Blend slightly, to desired consistency. Place in non-metal, non-reactive storage container, cover tightly and refrigerate overnight, allowing flavors to blend.

Yield: Serves 8.

served with toasted bread on the side.... peach or lavender iced tea and watermelon with fresh mint leaves for dessert.

You can spike the tea with liquor like a nice rum. biggrin

OH and BTW I love my gazpacho w/ zucchini bread (I'll dig up that recipe so you can copy for later)

Got this from the Eating Well Magazine Recipes.... biggrin I do it with canned beans.


This simple bean and salmon salad becomes something truly exciting when dressed with a bold dressing flavored with anchovies and arugula. Canned wild Alaskan salmon is a healthy and environmentally sound choice. Thoroughly drain the beans so the salad doesn’t taste watered down. Sometimes heating beans slightly makes it easier to drain off the cooking liquid.


Bean & Salmon Salad with Anchovy-Arugula Dressing Recipe

4 servings, about 1 1/2 cups each

Active Time: 30 minutes

Total Time: 30 minutes

  • 1 1/2 cups baby arugula
  • 1/3 cup fresh parsley leaves
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 2 oil-packed anchovy fillets, finely chopped
  • 1 tablespoon chopped shallot
  • Pinch of salt, plus 1/4 teaspoon, divided
  • 1/4 cup extra-virgin olive oil
  • 4 cups cooked cannellini beans, well drained, at room temperature or warm (see Tip)
  • 1 7-ounce can wild salmon, any bones and skin removed, flaked
  • 3/4 cup thinly sliced radishes
  • 1 stalk celery, sliced diagonally 1/4 inch thick
  • Freshly ground pepper to taste
  • 4 large leaves butterhead or Boston lettuce
  • 1 avocado, sliced, for garnish

Preparation

  1. Place arugula, parsley, lemon juice, garlic, anchovies, shallot and pinch of salt in a food processor; process until finely chopped. With the motor running, slowly drizzle in oil.
  2. Gently combine beans, salmon, radishes, celery, the remaining 1/4 teaspoon salt and pepper in a large bowl. Pour in the dressing and gently toss to combine.
  3. To serve, line 4 plates with a lettuce leaf. Divide the salad evenly among the plates. Garnish with avocado slices, if desired.

Tips & Notes

  • Tip: How to Cook a Pot of Beans
  • 1. Pick over 1 pound dry beans to remove any pebbles or broken beans and rinse well under cold water. Place in a large bowl, cover with 3 inches of cold water and soak for 4 to 24 hours.
  • 2. When you’re ready to cook the beans, heat 3 tablespoons extra-virgin olive oil in a large saucepan over medium heat. Add 1 small chopped onion, 2 to 3 chopped garlic cloves and 1 chopped celery stalk (optional). Cook, stirring, until the vegetables are beginning to soften, 3 to 4 minutes. Drain the beans and add to the pan. Add enough cold water to cover the beans by 1 inch. Bring to a boil and boil for 5 minutes. Lower the heat to a bare simmer, partially cover and cook, stirring occasionally, until tender, 20 minutes to 3 hours, depending on the freshness of the beans. If at any time the liquid level drops below the beans, add 1 cup hot water. When the beans are nearly soft, stir in 1 to 1 1/2 teaspoons salt. (Do not drain; beans are best stored in their cooking liquid and the liquid can be used in some recipes.)
  • Makes about 6 cups.

Lemon Rosemary Zucchini Bread

I'm on a mission this summer. A mission out of necessity, resulting from the abundance of certain summer squash I planted in my parents' garden. Four plants. What was I thinking?! One zucchini plant alone could feed a family of four. Every time I stop by my parents' house my mother glares at me accusingly. Actually, she's not the glaring type. It's more like a bemused look that says, "we have a problem, and it's your fault," along with an offer to cook me up some squash (she has an excellent recipe) and a plea to give some to me to take home.

So the mission? Come up with recipes that we all like and that use a lot of summer squash. For this I have been experimenting with zucchini bread for the last two weeks. We have a couple fine zucchini bread recipes on the site, but I was hoping for something a little more savory. I tried all sorts of combinations, experiments with cheddar, with Parm, jalapenos, etc. Mom's response to most of them, "good if you toast them and then put sugar and butter on them." Not good enough. Finally I succumbed to the classic somewhat sweet zucchini bread, but seasoned it with rosemary and lemon, so you get a savory note. More than good enough. Really good. My conclusion is that zucchini bread works well with sugar. Here we use 1 1/4 cups for 3 cups of zucchini and 3 cups of flour. So, it's not a lot, but it's enough to make a lovely, lightly sweet bread.

Lemon Rosemary Zucchini Bread Recipe

  • Prep time: 15 minutes
  • Cook time: 45 minutes

Ingredients

  • 3 cups (390 grams) flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 2 Tbsp minced fresh rosemary
  • 2 eggs
  • 1/2 cup melted unsalted butter
  • 1/4 cup olive oil
  • 1/2 teaspoons salt (omit if using salted butter)
  • 1 1/4 cup sugar
  • 1 Tbsp lemon zest
  • 3 cups grated zucchini (from about 1 pound of zucchini)

Method

1 Preheat oven to 350F. Prepare two 4x9-inch loaf pans, either coating with butter or spraying with baking spray.

2 In a large bowl, whisk together the flour, baking soda, baking powder, salt, and rosemary.

3 Beat the eggs in a mixer (or by hand) until frothy. Beat in the sugar. Beat in the melted butter and olive oil. Stir in the lemon zest and grated zucchini.

4 Add the dry ingredients to the wet, a third at a time, stirring after each incorporation.

5 Divide batter/dough into two loaf pans. Bake in a 350°F oven for 45 to 50 minutes. Test after 40 minutes. If you gently press down on the surface of the loaf, it should bounce back, and a bamboo skewer inserted into the center should come out clean.

6 Remove from the oven. Let cool for a few minutes and then remove the loaves from their pans to cool on a rack.

Yield: Makes two loaves.

    • 4 green-tea bags
    • 1 1/2 teaspoons fresh lavender blossoms or 3/4 tsp. dried lavender
    • Lavender sprigs (optional)
    • 1. Heat 1 qt. water in a medium saucepan until it just begins to simmer. Remove from heat and add tea and lavender.
    • 2. Steep for 5 minutes. Strain into a heatproof pitcher or bowl. Let cool.
    • 3. Pour into ice-filled glasses and garnish with lavender sprigs if you like.

  • 8 tea bags
  • 4 ripe peaches, cut into 1/2-inch pieces
  • 1 small bunch fresh mint sprigs
  • Sugar, to taste (if desired)
Preparation
  • Pour the water into a heat-resistant pitcher. Add the tea bags and let steep for 10 minutes. Remove and discard the bags and allow the tea to cool to room temperature before refrigerating. Add the peaches, mint, and sugar (if using). Strain, if desired. Pour over ice.

Ingredients
  • 1 (16-oz.) package frozen blueberries
  • 1/2 cup fresh lemon juice
  • 4 cups water
  • 3 family-size tea bags
  • 3/4 cup sugar
Preparation
  • Bring 1 (16-oz.) package frozen blueberries and 1/2 cup fresh lemon juice to a boil in a large saucepan over medium heat. Cook, stirring occasionally, 5 minutes. Remove from heat, and pour through a fine wire-mesh strainer into a bowl, using back of a spoon to squeeze out juice. Discard solids. Wipe saucepan clean.
  • Bring 4 cups water to a boil in same saucepan; add 3 family-size tea bags, and let stand 5 minutes. Remove and discard tea bags. Stir in 3/4 cup sugar and blueberry juice mixture. Pour into a pitcher; cover and chill 1 hour. Serve over ice.

Zucchini recipes:

Put linguine pasta in boiling water.

Heat a teaspoon olive oil and fry the thinly chopped garlic, red pepper (if too hot, scrape off seeds), and Grated zucchini.

Toss linguine through zucchini/garlic/pepper mixture and the grated parmesan.

Serve with Olive oil, pepper, salt to add for individual taste.

Zucchini with feta is always a winner!
