I love cooking for myself. I cook exactly what I feel like eating, at the time that I feel like. That is one of the great joys of being single.

My personalised favorite recipes from Donna Hay

Zucchini & Garlic Pasta

200g spaghetti
2 zucchini (courgette), grated

2 cloves of garlic
1 tablespoon lemon juice
pinch chilli flakes
sea salt and cracked black pepper
finely grated parmesan, to serve

Cook pasta in a large saucepan of salted boiling water for 10-12 minutes or until al dente.
Drain and return to the pan to keep warm.

Heat garlic in oil, ad zucchini and chilli.
Toss drained spaghetti in with lemon juice and salt and pepper.
Sprinkle with finely grated parmesan and serve immediately. Serves you very well.

Another one from Donna. Just love her recipes.

Lemon-asparagus-cream pasta

Very fresh. Doesn’t feel heavy like other pastas.

recipe:

1 1/2 cup (12 fl oz) cream
1 1/2 cups (12 fl oz) chicken stock
1 teaspoon grated lemon zest
1/4 cup (2 fl oz) lemon juice
3/4 cup finely grated parmesan cheese
400g (14 oz) spaghetti
500g (1 lb) asparagus, trimmed
1/4 cup chopped flat-leaf parsley
cracked black pepper and sea salt

Place the cream, stock and lemon zest in a frying pan over medium heat and allow to simmer rapidly. Gently whisk in the lemon juice, then stir in the parmesan and cook for a further 10 minutes or until the sauce has thickened. Place the spaghetti in a large sauce pan of lightly salted boiling water and cook until al dente. Drain. Cut the asparagus into thirds and steam over boiling water until tender.

To serve, toss the spaghetti with the asparagus, lemon cream, parsley, pepper and salt. Serves 4.

This one is good too. Do buy responsible when eating tuna. I love it, however, do feel guilty when eat ing it. Very double standard, I know.

For this recipe, I like to make my own mayonnaise, with roasted garlic. Delicious. And I toss in a can of artichokes. And green olives from a Maroccon guy who only sells great products in his shop...

creamy tuna and chickpea salad

recipe

¼ cup mayonnaise
2 tablespoons lemon juice
sea salt and cracked black pepper
1 x 400g can chickpeas (garbanzos), drained and rinsed
2 x 185 g cans tuna in olive oil, drained
80g baby rocket (arugula) leaves
1 green onion (scallion), finely sliced
flatbread, to serve

Place the mayonnaise, lemon juice, salt and pepper in a bowl and stir to combine. Add the chickpeas, tuna, rocket and green onion and toss to combine. Serve with crispy flat bread or toasted sourdough croutons. Alternatively, wrap in flatbread or lavash for a portable meal. Serves you well.

This one needs a little preparation, because the meat needs to soak in all the flavors. You also might want to half the portions. However, you also just might eat it for lunch, evening and right before bedtime. Who cares? Do whatever you feel like. You don't have anybody to think about, but yourself wink

I allways love these with an easy fresh salad. A greek salad for example.

Ingredients

5 lb baby back ribs
2 inch pieces fresh ginger, sliced
1 tsp fresh ginger, grated
1 c sugar
1 c ketchup
1/2 c soy sauce
1/2 c oyster sauce
1/3 c hoisin sauce
2 clove garlic, crushed
1 Tbsp sake ( japanese rice wine)

Directions

1
Cut rack of ribs into 2-segments pieces.
2
Place into a large stockpot with the sliced ginger, cover with water and simmer for 1 1/2 to 2 hours.
3
Remove the ribs from the pot into a roasting pan.
4
Combine the remaining ingredients.
5
Marinate ribs in the sauce for 4 to 5 hours, place in the refrigerator.
6
Broil or grill ribs, sprinkle white sesame seeds.
7
Makes 10 servings.

My tastebuds don't settle for frozen microwave stuff.

I just can't swallow that prepared stuff. I need fresh food. And fresh herbs.

I don't know about THAT! I do enjoy watching the Food Network, and I enjoy eating...but when it comes to actually cooking the stuff myself...meh!

Cooking is something you will learn by doing. And when you start doing it, and you composed your first delicious meal, you will want to improve yourself the next day.

Don't worry if some meal ends up tasting like sh**. That's how most frozen microwave meals taste like anyways..........Buy yourself the books from Donna Hay. They must be available in a second hand book store or second hand books selling website. She has great cookbooks with easy and simple recipes. Also the "classics 1" and "classics 2" books from Donna Hay are good. She goes in to the basic cooking methods and recipes, and makes it all very easy.

The most important thing about cooking is finding the right ingredients. I now know where to buy my olives, goat chees, chorizo, fish, even the cans with artichoke harts. And it doesn't mean it has to be expensive. Au contraire. I go to the market, specialized shops and the cheapest supermarkets. However, I never buy meat or fish from a supermarket. I want to know where the meat that I eat comes from. I don't trust supermarket food that much.

Just go for it. You will love cooking, when you get yourself into it. Why don't you start with a simple pasta tomorrow?

Right now I'm not 'solo' yet...depending on my mood and/or temperament on the homefront I either eat out or eat whatever she made if I come home early. Tonight, for example, I am hitting the gym after work, then getting Teriaki Chicken from the Japanese place at the food court in the mall.

In 2 months or so, when I'm officially solo, I promise to try my hand at the 'cooking' bit.

...and many orgnotes will come your way as a result!!!

WHICH REMINDS ME...I took my boys to Hooters for the first time this past Saturday. It was funny as H*LL to watch them squirm and try not to look when the waitress came to the table. (I caught myself staring a couple of times boxed)

I should post pics! lol
