eating 4 one

i am starting to enjoy the single life nod

but i am finding it hard to motivate myself to eat healthy when the kids r not around sigh

and i am binging on chocolates and chips disbelief

so 4 dinner tonight i boiled some corn added salt and chilli powder ... its good confused

who has some good eating 4 one ideas???????????????????? that make the mouth drool

Yeah it is frustrating to cook for one. When I cook (and that's not often at all boxed ) I always cook more and eat the rest in the following days. Mostly some pasta/noodles stuff. I don't enjoy cooking at all, so then at least it's for more than one meal shrug . When I am staying with my boyfriend he is the one who is cooking and I am just helping him woot! . Even though since I am with him I even started to enjoy cooking a little bit, but not too often please mr.green . So yeah sorry I cannot help much, but I will read here for advice biggrin .

I've discovered readymade frozen dumplings with MiGoreng 2 minute noodles. Easy, tasty and cheap, just like me!

If I want dumplings, I'll just add them to pot about 3-4 minutes before I add the noodles and you can add a half cup of frozen stir fry veges as well for a couple of minutes if you want. So easy and you can do it in one pot.

I happen to love cooking for myself. I have no one else's tastes to cater to and dammit, I'm worth a yummy meal.

I adapt all kinds of recipes to make just for myself. I tend to make a lot of stir frys - things that are easy to make for one. (I honestly just thrown in whatever veggies and stiff I want, season with my homemade sauces and stuff and I make exactly 1 serving of rice in my rice cooker.O)

OR I make things that will freeze well - soups and stuff. Then I parcel out each leftover serving into it's own freezable container.

I cook for myself all the time. I tend to make big meals and have leftovers ready to go. It makes planning meals for the rest of the week easier. Other than that, I make salmon and other seafood a lot at home--that's definitely easy to get in single servings. Finally, do you have a Trader Joe's? Tons of great stuff there.

I am not single, but i like to do things like marinate chix breats and grill them, then i can have tacos, salads, sandwiches and wraps all week 4 lunch... the same with a good pot roast that I can shred.. i make wraps, salads, bbq sands etc...

1 whole chicken can be boiled and after removingthe chix youcan use the broth for soup, the meat for casseroles or use it in any recipe like say mexican or indian cooking...

when you make salads add things like beans, eggs, and veggies to make it a healthy meal...

Tuna isnt expensive and makes great sands, salads, casseroles...

I cook all my meals every day. I use my toaster oven a lot! I eat a lot of salmon and it cooks really well in there. My meals are usually some type of protein with veggies, I steam the veggies all the time, they cook pretty quick when its jut for one person.

Oh yeah, it says 55% of recommended daily saturated fat content and 35% of recommended daily salt.

Cooking for one does suck but after a while you get use to it. An example of what I do, on Sunday night, I'll bake about four chicken breasts. I'll eat one and use vacuum bags for the other three. I cook different sides each night because the rice, beans, or the frozen spinach, broccoli, corn, etc. don't take that much time. I also buy a couple of prepared meals from the grocery store Fresh and Easy, for the couple of nights a week I don't feel like doing anything in the kitchen, but want to avoid the fast food.

I reckon after cooking for 5 every day, cooking for one sounds like something I would like. I'd get a smaller slow cooker razz and do stuff I can eat over several days, dishes I would like for a change!!! drool
