So far with the slow cooker…

I've made: minestrone soup, bolognese sause (twice - so far it's winning!), lamb shanks with barley and parsnips, and today I'm making that pretend Indian dish Butter Chicken lol

The master drove into our driveway the other night and said when he got out of the car he prayed to god that that incredible aroma was coming from OUR house falloff

I've got my eyes on:

stroganoff, goulash, borsht, pea and ham soup drool

I'm learning, slowly geek

gosh I'm hungry now typing all that drool drool

woot! let's hear it for hearty winter dishes (sorry northern hemispherers nana )

I prefer to cook for myself as opposed to anyone else cooking for me. Take a look at some recipes online and just give it a go.

I'm in the limmerance phase right now

I can see this thing coming out in the winters

Last night I made this:

Butter chicken drool

even 2 of my kids ate it eyepop

I'm not usually a fan of thigh meat, but slow-cooked, it's incredible!!!

The master's eyerbrows nearly shot off the top of his head when he tasted it!

That recipe is a keeper nod

And this morning I had the barley leftovers from the lamb shanks I made the other day, and it is AMAZING in terms of flavours eek

I have four slow cookers. I use them most in the winter months. Since I'm going to night classes over the summer, I've been using it more in the last week. Hubby can come home to a hot dinner and I can have dinner when I get home as well. Makes life easy! biggrin

This morning I decided on a whim I'd like to make kofta korma drool

but I didn't have enough time to make the ground meat into balls, so I threw it in loose and hoped for the best.

OMG!!!! love it has ended up being the most delicious thing!!!

I sort of went by this recipe:

Lamb Korma

2 Tablespoon olive oil
1 Tablespoon ground Coriander
½ teaspoon hot Chilli powder
1 teaspoon ground Turmeric
1 teaspoon ground Cinnamon
6 green Cardamom pods, lightly toasted & crushed
2 Cloves garlic, finely chopped
2 medium Onions, diced
1 Tablespoon fresh Ginger, finely chopped
700 g boneless Lamb shoulder, trimmed of most fat and cut into cubes
125 ml boiling water
½ a Chicken stock cube
½ teaspoon freshly ground black pepper
3 heaped Tablespoons of Coconut cream
Salt & pepper to taste
2 Tomatoes, roughly chopped
6 Tablespoons double cream
2 Tablespoons fresh Coriander, chopped
Naan bread and Basmati rice to serve

Special equipment required: Crock-Pot Sauté model or standard Crock-Pot

Peel and chop onion, garlic and ginger. Trim and cube lamb. If using a Crock-Pot Saute model as demonstrated, pre-heat the pot base on Low.

Add the oil to the pot, then place the stoneware on the hob, heating gently on a low flame. Otherwise, use a frying-pan. Add the coconut cream to the oil and heat whilst stirring for a few minutes.

Add the chopped onion, garlic, ginger and spices. Stir and cook for around 3 minutes. Lightly toast the Cardomom pods in the oven, crush and add to the pot. Add the lamb, stock cube, water and seasoning.

Stir, return the stoneware pot to the base and cover.

Cook on the Low setting for 5 hours. Add the tomatoes and cream, stir and increase to High heat setting for a few minutes to bring back up to heat. Add the chopped Coriander and stir. Serve the Lamb Korma with lightly toasted Naan Bread and Basmati Rice.

(I threw in 2 diced potatoes and substituted ground beef instead of lamb, since that's what I had, and instead of cream, I used the whole can of coconut cream instead)
