So I get some cactus to cook.... its supposed to be good for my asthma/swelling.
So I cook it... its really sour! and slimy... so its a vegatble and I am trying to make it more um... edible. The slime factor makes it so I have to make it taste great. Its hard to eat without making my eyes water.
So what should I try to add to it to make it less sour?
Any suggestions are welcome, especially my south westerners (USA or anyone else) who knows how to cook this plant.

You can add whatever you want but I am partial to veggies and seasonings that go along with the sour taste of cactus--which I think are eggplant, zuchinni, onions, garlic, and assorted peppers. Also, don't cook the cactus for too long--then it gets slimey like okra. Put the chopped up cactus in at the end of your cooking and briefly heat it--whether it is in a chili dish or stir-fry. My favorite is--hands down--chili, with zuchinni, onions, tomatoes, and peppers added. Hope this helps! Also, pickled cactus is a real treat! OMG! Thank you! I just made it with my eggs/ chicken, onions, garlic, cilantro and cheddar... sauteed w/ olive oil. I'll break out my wok for the cactus instead. Maybe throw in some shrimp too.
I like to make martinis out of the fruit (tuna) ... I love the fruit! So I will try the recommendations. I need to add more peppers to my cooking regimen ... I usually just cook the sweet (minis) and bell peppers.
I know nothing of south western food really, I am Puerto Rican and the food is different. Still the cuisine is wonderful, I am trying the chili tonight! TYVM!!!
