We have several all you can eat fried catfish restaurants down here and we eat till we bust. You can either get fillets, whole fish, or mixed. I prefer the whole fish because you get thicker meat instead of just a bite full of crust. The crust is delicious but I like to taste the meat....some thick meat. Oh damn, that's reminding me of something else. evillol

And when you're slow cooking those greens or Kentucky Wonder string beans for a few hours with some bacon grease, fatback, hamhock, or whatever you prefer, you got to have some blues playing in the background or they ain't gonna turn out right. Play some ZZ Hill or Denise LaSalle. lol

Tried it once but wasn't too crazy about it. Not that I wouldn't be open to trying it again, maybe depends on the way it was cooked that made it have a strong 'pond' taste to it.

Whole fried catfish = drool

It stays so much more moist and juicy when left whole, too. I like pulling the skeleton out of my mouth like in the cartoons. giggle

Catfish, tilapia, pangasius and many other freshwater fish sometimes have a tendency to have a moldy, "pond" taste due to the things they eat and their habitat. I am not too fond of freshwater fish, I prefer seawater fish but there is a way to get rid of that weird taste. Either soak the fish in some buttermilk or in lemon juice, but be careful that you (or they) don´t let it marinate for too long in the lemonjuice because the acidity might "cook" your fish, like in a ceviche dish.

Ok, that's what it must be, I was raised on saltwater/deepsea fish. Thanks for the tip, I'll keep that in mind next time if I do decide to try catfish again.

my aunties Louisiana gumbo (yes there are differnt varieties) - minus the oysters.

my mom's new healthy take on greens (a bit al dente) with smoked turkey

Down in Mississippi. Damn, I never would have thought that we were the exclusive all you can eat catfish state. I figured it was like that everywhere. Hell, I can think of about four or five all you can eat catfish restaurants right off the top of my head. lol

That's what I keep trying to tell people but they won't listen. They are so obsessed with fillets because they don't have to watch for bones. But with a catfish though, the main bones is the sketeton right there in the center. Hell, it ain't like Buffalo fish that contains multiple little small bones in every single bite. I don't even waste my time on Buffalo fish. lol

Some of us "up nort'" (as we say in Wisconsin) eat catfish, too - though bluegill, lake perch and walleye are more popular.
