Let us dine on beans and bacon!

I made homemade black bean soup for the first time ever, and it turned out pretty well (despite my not having room in my kitchen for a food processor, so the mashing of the beans was a little...well, let's just say that the soup doesn't look as good as it tastes). Anyway, it's cold out and I'm going to pair this hot soup with a bacon sandwich.

What are you having for dinner tonight, org?

Pork tenderloin slow roasted in orange juice and white wine with homemade cranberry sauce drizzled over it.. and a baked potato!

I looked it up. What a fun thing to learn! I had no idea. Turns out "rocket" meant arugula before it ever had any other meaning. This thread has helped to educate me!

we just finished lunch so I haven't thought about dinner!

Lunch was orange chicken lo mein over steaming hot noodles

Dinner will probably be hackbraten, which is the German version of a Salisbury steak (small portion) or a meatloaf (family main dish).

I will stuff the patties with spinach & feta this time, and serve a creamy sundried tomato sauce...I guess the side will be a whole grain of some kind (cous cous, quinoa, or barley), and a simple salad with red wine vinaigrette.

I did a cheap and EASY meal...

I made a rotisserie chicken (I own one of those Ronco ovens) .... well seasoned, glazed with honey

I did a stir fry of brocolli, snow peas, yellow onion, bell pepper- red and yellow cut in big pieces and pineapple chunks (fresh) with olive oil and a bit of pineapple juice

white rice to go on the side.

I never measure boxed

I like that, too - but since I rarely eat pasta, I make something I call a "hot nicoise." Sort of a take-off on a nicoise salad, only you make it in the oven. Oven roasted potatoes, green beans, cherry tomatoes, nicoise (or pitted kalamata) olives, a can of olive-oil packed tuna, a sprig of thyme, a squirt of lemon juice, and salt and pepper. Put it all in a foil packet and bake for 20-30 minutes (just 'til it's hot) in a 350-degree oven.

I usually plan ahead for this, so I oven roast some potatoes and green beans on Sunday, so I can have the nicoise during the week. But you can also use frozen potatoes and beans. It'll just take a little longer to cook.

Total comfort food. cool

Soon as I read that, it brought back memories of my first salad nicoise. My boss's wife served it at their daughter's graduation party. She had the food catered. The salad was in a big bowl and it looked positively magnificent. I knew I was going to put a hurting on it, so I got a plate, filled it with just that salad and went to the kitchen out of view and scarfed like no tomorrow. I haven't had a salad that good since. sigh

Do you have a Nordstrom near you? Does it have a café? The reason I ask is that the Nordstrom Café (in the Mall of America store) makes a very good salade nicoise with grilled salmon.

I love salade nicoise. The only thing I don't like is that it's time-consuming to make. All those pre-cooked elements (like the potatoes and green beans), plus the herb vinaigrette - which I also make, myself.

I think the key to a fab salad is the potato prep. You need to sprinkle the potatoes with vermouth, salt and pepper when they're just out of the boiling water, then dress them with the vinaigrette while they're still warm (so they absorb a lot of the dressing). drool

See, that's why I've never tried to make it because I knew when I tasted all those flavors mixed together that I would never get it right. The one I had consisted of mesclun mix, hard boiled eggs, tomatoes, string beans, seasoned potatoes, those lovely olives, tuna, capers and a vinaigrette that was out of this world!

I was think of doing the same!!

I mix my meat up with cornbread crumbs (made from that jiffy muffin mix) or banana bread crumbs.

the kids love it.
