I'm a Rican and collard greens are a staple on my family's table.

My son gets upset if he doesn't see the collards or the smack your momma mac n cheese.

Both go great along side a spiral ham glazed with a nice crunchy brown sugar baked coating and candied yams!

Pastelles on the side!

I think its fried chicken and black eyed peas that bring New Year luck...we just add the collards cause, well...you know how we do it!!!

Anyone seen the episode of Sanford and Son when Fred was laid up in bed cause he ate some 8 day old collard greens?

can you eat them lightly steamed? they look really cooked (overcooked even) in the photos when I googled. I can't stand spinach unless it's only like felt a breath of steam, otherwise barf I'd rather eat it raw confused

Raw or "slightly steamed"? Yes, they would be tough and they can be bitter, tho' bitter isn't always a bad thing, this gives them flavor. Some people like "bitter" greens, cooking them makes them tender.

I LOVE COLLARDS!!!!!!!!!!!!!!!!! Omigod, I could go on about it forever!!!! I mean, Soul Food/Southern is my fave cuisine ever. And let me tell you after a few days of eating them, my anemic ass isn't always going around bitching about being cold. That iron in those collards does wonders. But isn't the juice that comes from cooking collards called pot liquor?

Who the hell DOESN'T love collard greens for the holidays?????? It's a staple in my family. Back in the day, my aunts used to cook them with fatback, but not any more.

Lord,how I miss collards! They're not native to where I live now, so I have to find substitutes.

I still cook my greens with pork, though- not fatback but any other smoked pork.

Even though they don't have collard greens here, ironically Germans have a similar dish called Grunkohl...it's like a deep dark green cabbage (curly kale) chopped finely and cooked with big ass sausages that look a little like kielbasa. Them shits is good. hmm

when I need to get my American soul food groove on, though, I use turnip greens. the funny thing is, people don't eat the turnip greens here: in the supermarket they just detach them and throw them away! when I'm in the mood, I just march right in and have the garden grocer bag me up what they would normally detach...and they just give them to me for free. I've tried to explain what I do with 'em but these damned people think I using them to feed my kids' rabbits (that's the only reason why people take turnip greens) lol . I take them turnip greens, and a cured salted pork

either smoked pork chops

or smoked pork belly/uncut bacon, with some hot peppers thrown in...I need my greens to give me The Itis after I'm done eatin' 'em or I'm not satisfied. water foodnow

OMG!! YES!!!! Love collard greens and cornbread...damn, I miss that kinda southern, soul food my mommy used to cook. Haven't had this in 8 years..oh how my eating habits changed.

According to the Alabama side of my momma's family, it's fish, b-eyed peas, and greens:

the silver skin of the fish is your silver coins

the peas represent copper and gold

and the greens represent paper money

Broccoli is my choice of vegatable. Raw in a salad or steamed in a pot with a little

butter and salt. I can eat broccoli everyday.
