I like that, too - but since I rarely eat pasta, I make something I call a "hot nicoise." Sort of a take-off on a nicoise salad, only you make it in the oven. The only kind that I could find was too fine I think. Then my mom started sending me the mix. Since then I have discovered most of my baking problems come from the oven. So I just gave up baking unless it is something that is not a "baked good". It is ok for roasts and things like that but since the seal and door hinges are not right, it is hard to keep the temp right inside. It works well at heating up the kitchen.

I'm excited to try this. I swore by the Jiffy mix for years until I found out last year it contains lard. (Nothing wrong with it for those of you who consume animals, but being that I'm a veggie now, well, hmph. ) |

It it already full of corn meal? When I made it the other night I added a tablespoon of oil because it looked too dry. Came out really nice 
i never add oil- adding a little bit more yellow cornmeal gives it a REAL cornbread feel and taste and not so much a sweet cake like taste... I love Jiffy mix but my mother is from the south and she doesnt appreciate all the sugar jiffy adds- I do melt butter in the botom of my pan and on top when its done  LOVE HARD. |

See, I think some folks like it sweet and others don't.
Me - I add butter and honey on top when it's done, even when I was making the Jiffy.
