Whats for dinner Wednesday???

I know it's only Tuesday. But maybe we could have a weekly 'whats for dinner wednesday thread' and post whats for dinner tonight at your house and the recipe. Except we'll do it on a Tuesday.

Were having Shepards pie. I bought a lot of ground meat and need to get rid of it, and I'm trying this new thing where I don't buy anymore food till the food in the fridge/cupboards are gone.

Make mashed potatoes with potatoes sour cream butter and an egg, mix in sum cheddar cheese.

Brown meat mix with your choice of gravy (I like to use cream of mushroom soup) throw in veggies of your choice. (I used some chopped up carrots and corn) Pretty much the only cooked veggies both my kids will eat rolleyes

Put hamburger mixture in bottom of casserole top with mashies. Bake @ 350 for 20 or so minutes. Add some more cheddar chees to potatoes, bake a couple more min.

I just finished making dough for wonton wrappers. I'll fill some of them with seasoned ground meat and veggies, and the rest with salmon and cream cheese. Deep fried because I don't feel like going through the process for my favorite method (steamed, then pan-fried). I have a bunch of leftover cooked white rice, so that'll turn into veggie fried rice.

Tonight I'm making me and my man a curry. Panang curry paste, lite coconut milk, Bragg's Liquid Aminos (I use in place of soy sauce) and I'm throwing in what I've got in the house - seitan (wheat gluten), white sweet potatoes, carrots, onions and some dried cranberries. Served over basmati rice (cause I'm out of jasmine). It's totally a hodge podge of flavors and not a perfect recipe by any means, but it should be tasty.

Okay, that sounds fucking delicious! Kinda like a somosa?? One of my FAVES EVER. I never made them on my own though, this Indian chic that lived near us overseas used to make em, and I haven't had on since.

Any kind of dough wrapped around a filling and fried is pretty much the best thing ever, isn't it? biggrin

oxtail- stewed, rice w/peas, sweet plantains and butternut squash/carrots baked with toasted coconut....

I might make a homemade flan for dessert. biggrin

Minestrone leftovers!

Actually, it started off as minestrone, but it has curry paste in it, so it's freakin AWESOME

some onion/carrot/celery browned a little, then 2 litres veg stock, barley, lentils and 3 types of dried beans (whatever is in my pantry), tin of tomatoes ( a teaspoon of madras paste or a generous shake of curry powder)

let that simmer until the dried stuff is soft

add a cubed potato

15 minutes before you plan to serve it up, chuck in some fresh vegies like green beans, zucchini, broccoli, cauli, ditalini pasta

1 minute before serving, a handful of coriander leaves/basil or whatever you like, and chopped spring/green onion

drool drool

it tastes even more awesome the NEXT day

Are you both vegetarians or vegans?

He eats meat, but was a vegetarian for about 6 years in his past. I'm a veggie these days, though.

Meat really has it's own flavors so a bit of meat and maybe onion and you're set for flavors in lots of things. If you cook vegetarian you have to learn to find other wonderful flavors. And I loooooooooooove spices!
