This week I made an amazing baked mac and cheese with cheddar and blue cheese, and homemade buttered bread crumb topping. Nobody in my house is a big blue cheese fan, so I thought it would be all for me.

It was amazing, and the kids not only ate it but literally licked the baking dish. eek I only used about 1/2 cup of blue cheese in the sauce to 2 1/2 cups mild shredded cheddar, but it added an incredible flavor. I also caramelized finely chopped onions (with minced garlic for the last 2 min) in the butter before making the roux.
