I need some tofu recipes now that I'm feelin sassy. Sounds like you've got the right idea. I usually eat some kind of tofu or seitan stir fry 3-4 nights a week. As long as you go easy on the oil, it's really sooooo good for you. And yummy too. And yes, I press the moisture out too, like Erin said. I just wrap in paper towels and lay something heavy-ish on top while I'm chopping my veggies. |

I usually fry mine first, then set it aside and do everything else, then toss it back through the last few minutes to warm it through again. You get that nice, chewy consistency that way. And I always buy extra firm. I even found SUPER firm once, and it really was. It was sprouted tofu, so even more protein packed and all. I will buy it again at some point, but it was a little pricier than my usual (which I can get a block for 99 cents at the asian markets here). |
