Steve Cropper. He wrote "Sittin' on the Dock of the Bay" with Otis Redding, and also "Knock on Wood" and "In the Midnight Hour". When Sam and Dave say "Play it, Steve" they're talking to Cropper. He was the guitarist for Booker T. and the MG's and was the session guitarist at Stax Records.

He was also the guitarist in the Blues Brother Band.

Yeah. There are very few people I want to meet in this world, but he's one of them.
