Mmmmmm Chicken Curry!!! I'm making that for dinner right now!!!

The problem with most people when they make chicken curry is that they think adding to spice packet or can of curry to the chicken is all you need to do to have delicious chicken curry.
Hell....to....the...fuck...naw. Especially for Thai panang style chicken curry. You gotta add coconut milk, and cook it with scallions until the sauce reduces by about 1/2 of the original volume.... then add the chicken, some basil leaves, pinch of garlic and pepper, sugar, sliced kaffir lime leaves, and FISH fucking SAUCE motherfuckers, krup krup mach mach krup ota ass krup! ! then you get good curry. | |

That one bottle can last me a whole year or more though...and I'm to lazy to go to my Asian supermarket weekly, so I always throw my kaffir lime leaves in the freezer, is that bad? | |

JAMAICAN GOAT CURRY! But how come once I bit straight down into a habanero pepper that was inside of my curry??? Out of the whole pot, I got the damn pepper??? My husband at the time thought I would have to go to the hospital thankfully I managed to recover with much assistance from some Red Stripe and rum cake afterwards | |

Oh YES.
I make it frequently... mostly Indian style. Curried Goat is the business, though. My 1st girlfriend was Jamaican, and she could COOK the curried goat. For the chicken, I usually use either Basmati or Jasmine rice. Saffroned jasmine is nice with curry. "He's a musician's musician..." | |

This thread reminds me that I'm out of my favorite curry blend - the Balti seasoning from Penzey's.
The seasoning is based on traditional northern Pakistan seasonings. But when I make Balti chicken, I use that seasoning plus coconut milk (instead of the yogurt the recipe calls for) and lime juice. It's my attempt at fusion cuisine. Feeble...but yummy. We don’t mourn artists because we knew them. We mourn them because they helped us know ourselves. | |
