For most recipes, all you need are Vanilla wafers, Cocoa powder, nuts, rum or bourbon, corn syrup & confectioners sugar or whatever you would like to roll them in. christmas Cookie Recipe.....Thumbprints
Ingredients: 3/4 pound (3 sticks) unsalted butter, at room temperature 1 cup sugar 1 teaspoon pure vanilla extract 3 1/2 cups all-purpose flour 1/4 teaspoon salt 1 egg beaten with 1 tablespoon water, for egg wash 7 ounces sweetened flaked coconut or chopped nuts or whatever else you want to roll them in. Strawberry, peach, apple or apricot jam 1/2 cup Confectioners Sugar How to Make the Christmas Cookie Recipe: Thumbprints Preheat the oven to 350 degrees F. Cream together the butter and sugar until they are just combined and then add the vanilla, using an electric beater. Sift together the flour and salt. With the beaters on low speed, add the flour mixture to the creamed butter and sugar. Empty onto a floured board and roll together into a flat disk. Wrap in plastic and chill for 30 minutes. Roll the dough into 1 1/4-inch balls. Dip each ball into the egg wash and then roll it in coconut or nuts or not at all. Place the balls on an ungreased cookie sheet and press a light indentation into the top of each with your thumb. Drop 1/4 teaspoon of jam into each indentation or a whole nut . Bake for 20 to 25 minutes, until the cookie is a golden brown. Sprinkle with a dusting of confectioners sugar or not. Cool and serve. I usually make about 3 batches of the dough and everyone gets their own cookies. We use candy sprinkles and before pouring the honey warm it and throw some orange/lemon rind into it. My mom makes these super yummy cookies -- they are peanut butter cookies with little mini snicker bars in the center. I love them. She emailed me this past weekend that she is sending me a package -- usually that includes those cookies.
I usually make a Midwestern delicacy known as Puppy Chow. It's so delish. And the recipe is super easy: 1 box of Crispex cereal (I have tried Chex in a pinch, it's not as good.) 1/2 c. of butter or margerine 1/2 c. of peanut butter (creamy, not chunky) 1 c. of chocolate chips (I prefer milk chocolate to semi-sweet) 1 c. of powdered sugar Pour the Crispex into a brown paper bag (the large size that you get from the grocery store). Heat the butter, peanut butter, and chocolate chips in a sauce pan until melted together into a sauce consistency. Pour this into the bag, over the Crispex. Fold the top of the bag closed, and shake the bag until the chocolate/peanut butter coats the cereal. Open bag and add the powdered sugar. Close the bag and shake again until the cereal is coated with the powdered sugar. Pour mixture out on waxed paper to cool. My mom adds more powdered sugar until the cereal is almost white, but I don't like that much so I just stick with one cup. It's so easy to make, and there isn't much clean up either. The check. I'm more of a xmas treat maker. I like to make almond bark covered pretzels and puppy chow. I love it when friends make me peanut butter blossoms (I prefer the Hershey kiss). I'm going to attempt to make these myself soon. I'm not a very good cookie baker though.
I also enjoy a good, old fashioned gingerbread man but I haven't received one of those in years. Not too many people seem to make them. Shake it til ya make it | |

My favorite Christmas cookies are called Cherry Crowns.
1 cup butter, softened 1 3oz pkg cream cheese, softened 1 cup sugar 1 large egg, separated 1 tsp almond extract 2-1/2 cups all-purpose flour 1 cup finely ground blanched almonds 30 red candied cherry halves Cream butter, cream cheese and sugar. Add egg yolk and almond extract, mixing well. Gradually stir in flour. Cover and chill 1 hour. Shape dough into 1-inch balls. Dip balls in lightly beaten egg white, then in almonds. Place 2 inches apart on greased cookie sheets. Press a cherry half in center of each ball. Bake at 350 degrees for 15 minutes. Remove to wire racks to cool. We don’t mourn artists because we knew them. We mourn them because they helped us know ourselves. | |
