In the summertime I love to grill eggplants until they´re all smokey and ashy and the skin almost peels off on its own...I then peel them, cut them into small pieces and sprinkle everything with salt, freshly crushed black pepper, a dash of lemon juice and lots of minced garlic and olive oil. You can also add a bit of tahini (sesame paste) to it but l don´t....and then I mash everything until it turns into some green, slimey looking but very tasty sort of guacamole, only with eggplants instead of avocado.
