Easy Peezy ...

Leftover Turkey meat, both white and dark
3 stalks of carrots cut in inch pieces
3 stalks of celery cut in inch pieces
1/2 onion diced
1/2 stick of butter or margarine
6 good sized potatoes cut in 1-2 inch pieces
2 cups of turkey broth saved from cooking the turkey,if not, one box of chicken broth, then one cup of hot water
1 box of Aunt Annie's Dumplings
season to taste, salt 2 tbsp?
season to taste, pepper, 1/2 teaspoon ?
sprinkle of garlic powder
couple of dashes of paprika
if you have fresh rosemary and thyme, add a sprig of each, if not, just keep going! You can taste as it goes on, adding salt, pepper, etc. as needed to your taste.

start with the onion, sauteed in butter
then add everything else with the liquids, then the turkey
add dumpling noodles last, after everything else is in the pot...
easy .. within 1/2 hour to one hour, my kids kill this!!!

Not soup proper, but soup-y and YUMMYLICIOUS!!!
Tried and true (and easy!), you can see from the condition of this clipping I've used it many times over the years. Sometimes we make our own biscuits.

Take turkey carcass put it in a pan of water - boil the shit out of it for a few hours or put it in a low oven overnight. You can throw in some carrots and herbs and an onion if you like.

Take out the carcass and pick off all the remaining meat drain the liquid - thats your stock

Then fry up some onions, add the bits of meat and ANYTHING ELSE you like. add back the stock and cook it until you have soup.

Soup is basically onions, stock and name ingredient.

Chicken soup - Onions, chicken, chicken stock.
Pumpkin soup - onions, veg stiock, pumpkin
Onion soup - onionsm, onions and stock.

You can add more or less anything else to this to make whatever you like. I love to make soups from a few ingredients as possible so they are fresh and wholesome. Never add ANY produced item, except some boullion occasionally.

here's mine. and it's awesome.

measurements are all relative...depends on how much turkey you have, how much veggies you like and how much soup you wanna make.
diced/chopped (whatever you perfer)
Onions, Carrots, Celery (approx. 1 cup each)
sauteed in butter until soft.
add chicken broth or water and chicken boullion (approx. 4 cups)
add a 15 oz. can of diced (or stewed) tomatoes. (if making a bigger batch use 2 cans or a 24 oz can) I'm tellin' ya...it's the tomatoes that make this soup so damn good.
Bring to a boil, add one cup of macaroni noodles...or any other shape you desire and continue to boil for about 5 minutes to 8 mins.
Add approx 4 cups of chopped turkey meat (white, dark or both)
ta-da! it's done. smile
I've found if you add the turkey too early it takes on a funky flavor, so that's why I put it in at the end. it's already cooked so it just needs to be heated through and that doesn't take much.
now if you have left over peas or corn or whatever...you can always through those in too.
if using boullion...becareful adding salt. but ofcourse season to taste with salt and pepper.
"not a fan" falloff yeah...ok
