I will occasionally eat chitlins. And by occasionally, I mean once or twice a year. I know they're nasty (theoretically speaking) and godawful for you, but I can't help myself. That shit is good.
Literally. | |

I used to love them, but I haven't eaten pork in years! One day they looked so good in that bag, I almost broke down. I thought, "What harm could it do?" But I didn't. "Love Hurts. When I lived in Philly I used to get pork rinds at the meat store. REAL pork rinds, not the airy fluffy ones in the chip aisle.
I'd eat them till I wanted to puke. I haven't found them here.

I was thinking of "fat back"- pork skin that you drop in hot oil and fry until crispy- with a little bit of fat still on it! http://en.wikipedia.org/wiki/Fatback "Love Hurts. Your lies, they cut me. You can buy a slab at the butcher, get them to slice it up, and drop it in that oil and fry the hell out of it. Let us know how it comes out! "Love Hurts. Your lies, they cut me. Now your words don't mean a thing. I don't give a damn if you ever loved me..." -Cher, "Woman's World"

I mean, I suppose the main ingredient is the same...pork skin. The one Veronikka posted is more of what I'm talking about. Fat back is Tocino, which you use as a base when cooking. You cut small strips and render the grease for use in whatever you're making. (and if you're a piggy like me then you eat the pieces instead of discarding them ) But that one is crazy salty. Chicharron, is pork rinds. Not as salty. Larger pieces (in Puerto Rico you can buy huge chunks at traffic lights ) and you sometimes eat it with Pan de Agua (baguette type bread). You don't cook it any further than how it comes. [Edited 10/29/09 15:45pm]
