my best friends are:

- egg whites
- cooking spray
- spray butter
- veggies
- lean meats

& if I'm absolutely dying for a carb, I'll do whole wheat couscous or brown rice. You get used to it, you also feel lighter not eating the heavier things (pasta, etc). You can do it!

I'm thinking of trying out that Stevia too hmmm

My husband is Type 2 and my son is Type 1. They were diagnosed exactly 6 months apart in 2006. I had to learn to cook differently for them, individually. that book is off tha chain! I'm not diabetic, but the recipes are healthy and TASTY! those french onion turkey burgers are off the meter!! I also have made her peach upside down cake. thumbs up!

Sure, but i do have to eat out from time to time and that's when I get my oil. I can't control what they put in my food in a restaurant.

Well back from tennis, and I thought of some of things on the way home!

Oh yeah.. I completely forgot about nuts! For a snack--a handful of "natural" almonds. I don't like smoked almonds.. I don't like seasoned nuts at all. Also almond butter is so good--and good for you. drool3 But be careful, it's highly caloric.

Another idea is to get those almond silvers at the grocery store, put em on a cookie sheet and toast em at around 350 degrees in the oven for around 5 to 10 minutes--watch 'em because you don't want to get them too brown. Then just throw em in a spinach salad! It's yummy!

Or you can throw them in some french style green beans, cooked in chicken broth, season with a little bit of salt and pepper.. and a splash of lemon!

Oh.. yeah fresh herbs! We have some growing in planters. We've got basil mostly because that's what I use. Then...we have some sage just growing wild. I use it for tuna and salmon. Gosh. there's so much. Love cilantro..thyme..

Have you ever heard of an Aerogarden! It's so cool. It's this indoor planter thing that sets on your counter. I want to get a small one for our kitchen--if I don't get one for Christmas. I think one of my relatives MIGHT get me one for Christmas. I'd had to have a small one..the 3Elite because we don't have huge counter space. But they have 6elite, too!

You know what I was thinking of trying for a little "comfort" food winter dinner. I was thinking of substituing wheat penne pasta for the "mac" part... so it would really be wheat penne pasta and cheese! Then serve that with a little salad!

Don't forget about quiche.. but you have to be careful to not eat too much of it!

I recently bought this cookbook called Vegetarian Cooking for Everyone. (The hardcover is like $40 new, but I bought one from ebay for $15.) I don't know how helpful it would be in terms of figuring out carbs/sugar because it doesn't list nutritional details, but it may help you figure out ways to cook vegetables so that they taste good. All I know is that my guy made the potato leek soup from there and it was so delicious (and simple -- no blender or fancy ingredients needed). I've asked him to make it at least twice since then. drool Every frickin' recipe in the book makes me hungry! Tonight I'm testing out another one. smile

I'm vegetarian and I use black beans seasoned with cumin, chili powder, etc. and rice. Yum!
