What are some of your favorite meat marinades?

Store bought or homemade.
If you're not doing the fucking, then you're taking one.

I put this McCormick's buffalo wings seasoning mix on any chicken, add some chipotle tabasco, lemon juice, pepper and a bit of ketchup and it comes out pretty well.

If I grill boneless chicken I marinate it in Dale's seasoning for an hour.


I grilled some bone in ribeyes tonight. Marinated them in pineapple juice and soy sauce for about 6 hours. They were some of the best steaks I've ever had.

Very thin sliced pork marinated in soy-gingermarinade

Preparation:
1. squeeze 1 clove of garlic
2. mix 1 dl soy sauce with the garlic, 2 1/2 tablespoon ginger syrup and 2 1/2 tablespoon sesame oil
3. Use half of they soy sauce ginger mixture as a dip on table. the rest as marinade
4. put the slices pork (ca 1/4 cm) into the marinade and let the meat for at least 30 minutes marinate
5. dab the slices dry and grill them ready brown and done

Tip nice with sesame seeds, which before grilling can be scattered onto the meet

Mix soy sauce, cider vinegar, olive oil, brown sugar, minced ginger and garlic, crushed red pepper and minced scallions. Lots of ginger. Ooh yeah. Fresh ginger and garlic, it makes allll the difference.

Or balsamic vinegar, olive oil, sea salt, cracked black pepper, and herbs of your choosing.

Or white wine, lemon juice, sea salt, garlic and oregano.

In order to tenderize the meat and distribute the flavor throughout, you've got to include some form of salt and an acid (vinegar or wine).
It's what you make it.

homemade...the neighborhood produce markets here are outstanding...tonight I'm toying around with a ginger soy marinade to roast fish with and I just bought a ginger stalk the size of my head for it. smile

For pork I crush garlic (garlic powder not same) in a pilon (pestle/mortar) with olive oil, coarse/kosher salt and coarse black pepper. I pour this over chops then sprinkle with oregano and let them sit for at least half a day.
If it's a pork roast (pernil drool) I stab (yes stab eek ) holes into it and let it sit in the marinade for a day or two.
