My mom has a dill dressing to put on salmon that is pretty good.

This one, 'nam chim suki' but only a particular one from our wet market, with lots of lime juice and also some soup too from around the grill. drool



Also, 'nam chim satay' and 'nam chim ajad' (chili, sugar, cucumber, vinegar, shallots), both of which you have with any meat satay style

I like fish sauce too. The Vietnamese and Filipino ones are good. They just add the "umph" to the dish.

WHat a good topic!

For salads:

olive oil and balsamic w/pepper is all I need.

Mango slices added w/ crushed peanuts nod

Malay-style satay sauce is beeeautiful.

And for things to add to anything really I just can't go past finely chopped shallots (spring onion) or chives (fresh of course)

Anything with potatoes gets rosemary and garlic nod

When I channel England : Branston Pickle drool
Dills, small pickled onions.

Ooooh mama yum

But really for me the King is pepper. I rarely use salt at all.

I forgot chilli oil and chilli flakes!!!! dOH!

Last time I was in England I carried a jar of chilli flakes in my bag. Food there just doesn't have the zing I'm used to.

When I was a meateater I used to go wild with a sauce I made out of cream, mushrooms and black and green peppercorns.

Now I use it to make risotto drool
