But when I get a referral for a logo and it's a case of "We haven't been able to find anyone who can create a decent logo...we were told to contact you. We need it by next Wednesday....", all of a sudden the ideas evaporate and leave my brain lol .

I can only speak for myself here, but I pretty much guarantee I will come up with something my client will like. When the client approves the quote, that is a legally binding contract. If I pull out of the project, client pays nothing of course, but if the client has agreed to proceed, and I complete a percentage of the work, I will have to charge them for that work. For fickle folks, there are some services on the internet offering "unlimited versions" for $149. I don't know how they operate, but I have a feeling they run it like a "competition" so multiple designers submit competition entries and the winner is chosen by the client, awarding the $149 as prize money. That kind of thing is not for me I have other things I'd prefer to do for no pay, like sleeping! or taking a bath

I will quote someone according to their brief, needs and expected exposure and turnover, so my price can vary from client to client. I have a lot of clients that keep coming back to me after being burned by folks offering cheaper services (like the client in question in this thread).
