Fried chicken is not one of my specialties (meaning I've never made it ), but here is Paula Deen's recipe:
House Seasoning: 1 cup salt 1/4 cup black pepper 1/4 cup garlic powder Southern Fried Chicken: 4 eggs 1/3 cup water 1 cup hot red pepper sauce 2 cups self-rising flour 1 teaspoon pepper House Seasoning 2 1/2-pound chicken, cut into pieces Oil, for frying, preferably peanut oil To make the House Seasoning, mix ingredients together and store in an airtight container for up to 6 months. In a medium size bowl, beat the eggs with the water. Add enough hot sauce so the egg mixture is bright orange. In another bowl, combine the flour and pepper. Season the chicken with the House Seasoning. Dip the seasoned chicken in the egg, and then coat well in the flour mixture. Heat the oil to 350 degrees F in a deep pot. Do not fill the pot more than 1/2 full with oil. Fry the chicken in the oil until brown and crisp. Dark meat takes longer than white meat. It should take dark meat about 13 to 14 minutes, white meat around 8 to 10 minutes. The Normal Whores Club

We soak the chicken in milk with a shake of hot sauce, salt and pepper for anywhere from 1 - 4 hours first but we've done it without as well. We've also replaced the self rising with regular flour when we're out of selfrise and we lessen the amount of hot sauce as a lot of kids don't like it. It isn't quite as puffy with regular flour but the kids love it. But, I'm a vegetarian so what do I know about fried chicken? Music is the language of the spirit. It opens the secret of life bringing peace, abolishing strife. --Kahlil Gibran

All I can say is.... you don't have to season wing dings overnight. You can cheat with the wingettes.
I would go with the wingette pieces...just soak in salted water for 1/2 hour, season GENEROUSLY and dip, coat and fry. next time try this stuff.... its great on fried chicken http://www.mccormick.com/...Blend.aspx [Edited 4/18/09 12:40pm]

Just get some flour and season it with salt, pepper, cayenne pepper and some LAWRY'S seasoning salt. I like to add that in addition to the other seasonings, but it HAS TO BE LAWRY'S! Don't use any other seasoning salt; it won't taste the same
Place all the ingrediants in a shallow dish. Use another shallow dish and place a couple of battered eggs in it. Rinse the chicken off and place the chicken into the egg dish to coat, then dip into the flour mixture. You can repeat if you want. Then place the chicken into the oil and fry. Voila I've been craving wings dings tonight as well. Last time I craved them, I was pregnant Smooches;)
