Because of this thread I actually decided against going out for lunch/dinner, and am actually making one right now! Last night for my women's group I made a Spinach one but had no time to eat any. I had an extra crust left in the fridge, so 5 minutes ago I just threw one together with cheese, herbs, and some prociutto and popped it in the oven! saving the time on going out will help me get by fed-exes done by 6pm giggle

It's in a small pan too, so it'll round out to two large servings and no waste! I'm bummed because it's too chilly to eat it outside, though neutral

have you ever had a tortilla tapa from Spain? it's really similar, baked nice and solid till you can cut it like a piece of pie..but the white potatoes they have inside make weigh me down so much I waddle like a duck after I eat it, so I usually boycott tortilla for quiche smile

hug Quiche is pretty darn good. nod What's funny is, my mom made a quiche for Easter (my family and I are not really ham lovers). I made a fruit salad as a side dish, just as you suggested above. It was really a nice, refreshing addition to the quiche.
RIP, mom. I will forever miss and love you.
