APOLOGY to CARRIEMPLS.... I told you eons ago that I had a recipe I wanted to share with you and then my busy life combined with my not so hot memory caused me to sort of forget.
Here it is. I thought I'd share it with anyone else that wanted to try it as well. BLACK BEAN CASSEROLE Ingredients: ~ 14 oz. can of stewed tomatoes ~ 14 oz. can of black beans ~ 3/4 c. salsa ~ 1/3 c. finely chopped onion ~ 1 large green pepper: 1/2 chopped & the other half cut into rings for topping. ~ 1 small can of sliced black olives ~ 8 oz. finely grated mexican cheese ~ 1 package of tostada shells ~ 2 tsp. garlic powder ~ 2 tsp. ground cumin ~ sour cream Cooking Instructions: ~ Preheat oven to 350 degrees. ~ In a large saucepan combine stewed tomatoes, black beans (undrained), salsa, onion, garlic powder, and cumin. ~ Bring to a boil. Reduce heat to a simmer. Cook for 10 minutes stirring occasionally. ~ In a rectangular baking pan (I use a 13x9) spread 1/3 of bean mixture on bottom. Top with tostada shells. Sprinkle 1/3 of cheese on top of that. ~ Repeat this twice more. ~ Top with green pepper rings for garnish. ~ Bake for 30 minutes. Let sit and cool for 5 minutes. ~ Serve with sour cream if desired. I serve mine with corn muffins and spanish rice. Damn I'm hungry now. | |
