I make these really amazing pumpkin muffins with chopped candied ginger. I top them with homemade cream cheese icing for everyone else, but I like them better without.

And I love blueberry muffins, but ONLY if they're full of juicy blueberries, I mean falling apart from all the fat, juicy berries. A bunch of dry-ass bluish spots does not a blueberry muffin make. disbelief Whenever I bake blueberry muffins, I use about twice the amount of blueberries called for. Frozen works fine, as long as you coat them in flour before adding them to the batter. That keeps them from all sinking to the bottom.

Ooh, and Trader Joe's makes these high-protein, high-fiber banana muffins with chunks of chocolate in them. Microwave them just til the chocolate begins to melt and they're delicious. They're perfect for breakfast; since they're made with whole grains, protein, and not much refined sugar, you don't get that sugar crash.

I'm all about some Bannana Nut Blueberry muffins. High in protein and antioxidants and carbs that you need if you work out a grip! biggrin

I confess! I just got back from Stop & Shop down the street... they had just opened and the muffins were warm. I bought a Cinnamon Chip AND a Blueberry... I couldn't decide. boxed
We're about to have a major snowstorm... I might need one for tomorrow. wink
