Another pasta for you.... this weekend I made a walnut pesto
Aunt Ottie's Pasta Pesto Cooked pasta for 4 2 C Thinly Sliced Leeks 4 Garlic Cloves or 2 tsp. Chopped Garlic 1 C Chicken Broth 1 C Fresh Parsley 1/4 C Olive Oil 1/2 - 3/4 C chopped nuts(preferably walnuts pecans, hazlenuts, or almonds) 1/2 C Basil 1 tsp.fresh or dried pizza/italian herb mix(like thyme-oregano-basil mix, ect) Parmesean cheese salt, cracked black pepper, and additional garlic to taste Optional: 1 TBSP pine nuts 1/2 to 3/4 C slice raddichio leaves sprinkling of parley for garnish 1.Cook a pasta of your choice, drain, and set aside. 2. Sautee 2 cups of sliced leeks on med. low heat (white and green parts) in olive oil (about 4 min), add 2 teaspoons of chopped garlic or crush 4 cloves garlic through a garlic press. Toss briefly Remove from heat and set mixture aside (to keep garlic from browning and becoming bitter). 2. With a blender (regular or immersion blender) or processor, blend 1 cup chicken broth, 1 cup fresh parsley, 1/2 cup basil leaves, 1/2 cup of nuts (almonds, walnuts, or pecans), 1/4 cup olive oil to make a fast pesto. It will almost resemble a cream sauce. If your nuts are not chopped or crushed before hand, to ensure a creamy blend, crush them beforehand by putting them into a ziplock bag and pounding the hell out of them with a hammer. Add to the other pesto ingredients and blend well. Pour pesto mixture and sauteed garlic leeks over pasta, and toss to coat. Add salt, black pepper and if needed, additional garlic to taste. Sprinkle pasta with parmesean cheese, and top with optional radicchio and pine nuts. Garnish with additional parsley. [Edited 2/22/09 23:43pm] | |
