I can't make those thick ones you call pancakes, but here is a nice recipe for crepes:
1 cup plain flour
1 egg
1 cup milk
(if you have 3 kids, triple the quantities - kids easily eat 5 each mad )

mix it up, let it sit 15 mins
get a big soup ladle and a smallish fry pan

put the pan on low heat, not lowest, but maybe next notch.
spray a little oil
pour in one ladleful of batter

turn it once it doesn't look shiny on the top anymore, when it's dull it's cooked through

put the finished cooked ones all on one plate, they'll stay warm in a stack until ready to serve

maybe try undercooking the rice the day before? I always use basmati rice these days, lower GI. It is usually never sticky if cooked absorption method.

I make great plain rice. Never sticky. It's just the stir-fried that stumps me. I will try the basmati. thumbs up! I'm going to keep trying until I get it right. mad

that's very weird hmmm and you make it in a wok on pretty high heat so it doesn't just cook it more?

lol I have some hope. My son is engaged to a girl who is part Vietnamese and part Chinese who can really cook. She only just moved here from Oregon recently. I will make her teach me all her secrets. cool

Okay, yes I have one of those! Didn't know what it was called though.

actually, now that I come to think of it, I use a small one when I use my small pan, and only the big ladle when I use the biggest pan. The crepe batter should only be as runny as honey.

I consider myself an expert cook and baker, and can make just about anything. I totally suck at making biscuits though. No matter the recipe, the pan, the ingredients, they are always short/flat.

To be honest...everything I have ever tried to make has turned out awesome but....steak. I can't make steak to save my life. I have tried...and can never figure out why it come out so bad. confused So I leave the steak making to the men. lol

I do NOT make decent rice without a rice cooker confused

I saw a Trinidadian Brooklynite girlfriend of mine do some killer rice over the holidays with a simple technique, ao I am going to give it a shot sans rice cooker....eventually... lol

letting the steak come to room temp out of the fridge and marinating it in beer always helps. Cooks better that way.

That's funny, almost everything I buy is whole grain except pasta. I guess it's the Italian in me. Have you tried pasta made from farro (spelt)? It's yummy and doesn't taste any different than semolina or white flour pasta! Whole wheat pastas are common in supermarkets North Italy (pasta integrale), and the last few times I was in Lombardy I couldn't keep my hands off of buckwheat pasta in cheee sauce, it's a pasta specialty from Bergamo cloud9

...this all reminds me though that I seriously suck at cooking pasta correctly. Somehow I'm wired to screw up the concept of al dente and my pasta ALWAYS comes out too soft mad sad mad !

My frosting never comes out good for the sugar cookies. And I tried making those yummy snowball cookies,they either burn or they dont bake all the way pout
