Brie and Gouda are fine choices, but my favorite is Irish Cheddar made with Jameson Whiskey.

Aged cheddar (8+ years) is also quite good.

The honey takes the edge off... I only started my foray into moldy cheeses about 6 months ago... I know, I know... disbelief

Most of my cheese eating involves other foods; pizza, burgers, etc. The only way that I really like block cheese is if it is sharp cheddar on a triscuit; must be a triscuit.

I love love love cheese and the smellier the better!

There's nothing I enjoy more than a cheese board after a decent meal and it's gotta include Brie, Camembert, some Gouda, Emental and a few really good blue cheeses such as Stilton, Roquefort and Gorgonzola..

As a very special treat though (cos it's hard to get hold of in the uk) I really enjoy Raclette..

p.s. If there are any Swiss/Alpine French orgers who would like to send me some Raclette please feel free to do so.. biggrin

I like all kinds of cheese except for the brie and camembert types of cheese. And I´m not really into blue cheeses with that green or blue moldy stuff but I really like Swiss Appenzeller or Greyerzer cheese, or even the classic Emmentaler. And then there are dozens of French cheeses that I really, really like a lot. Sometimes I eat Italian Parmesan, I put it into sandwiches, toast, paninis, on pasta, or just eat it plain.
I also like all kinds of feta cheese, Turkish or Greek or some really fatty Bulgarian types of feta. The higher the fat content of a feta cheese, the more I like it. lol
And I love Dutch cheesel. There, I ´ve said it ! I really appreciate a good Dutch cheese and I think Dutch cheese is much better than its reputation.
Irish or British cheddar cheese is also cool but a bit pricey over here if you want to buy a good one. I would love to try some good cheddars one day, I haven´t really tried any specialty cheddars.
And there are also lots of good German cheese specialties, too.
