Today I had some little cookies

and the crisp short-crust pastry was shaped like a whole walnut, and inside was almond cream drool my Polish friend made some for me - but I can't find a picture on the whole internet hammer
They are specially made with a little iron, like a waffle iron, but much niftier! Makes perfect little shells that stick together with the filling!

I don't know what they are but they sound good.

I wanted to make bourbon balls this year but they do not sell Vanilla Wafers here.

I know...it is an outrage!
They sell something called a Bourbon Cookie but it does not have Bourbon in it. Well if they do, there is not enough in them to taste it.
Since I could not make my Bourbon Balls, we bought a bottle of Southern Comfort. Not going to make anything with it, just gonna drink it with Ginger Ale with a splash of Pomegranate juice to make it festive.

They sell something called a Bourbon Cookie but it does not have Bourbon in it. Well if they do, there is not enough in them to taste it.
Since I could not make my Bourbon Balls, we bought a bottle of Southern Comfort. Not going to make anything with it, just gonna drink it with Ginger Ale with a splash of Pomegranate juice to make it festive.

maybe it's just me but....why would a walnut shaped cookie be filled with almond cream? shouldn't it have a walnut cream (is there such a thing?) or be an almond shaped cookie instead? hmmm weird

Aww thanks for the offer. I figure it is someone above telling me that I do not need them. After Christmas I hope to stay away from all of those bad things that I love like Vanilla Wafers. I can sit and eat the whole box in one sitting.

Not yet.... waiting for Immigration to process visa paperwork in Vermont. Could take 15 months so I was told.

We have not decided entirely where we will settle down. My uncle has offered for us to stay in one of his vacant but furnished homes in Delaware until we decide.
When I sent in the paperwork, I had to use my mother's address since I never longer have a mailing address in the states. They forwarded it from Chicago to Vermont for some reason. They are the busiest center and have the most back log. No rhyme or reason really, my mom lives in Tennessee.

Go figure.
Would have been much easier to have it processed here in London at the US consulate but they do not consider me a resident here either, though I have been her 15 months and have a visa.

but the mould needs another part to press into the other half, to make shells instead of solid cookies

The filling was a lot like dulce de leche (in color, for sure), and the cookies themselves were sweet; when I brought them out that evening, after a Cantonese dinner for eight, boy did they go fast.

I must add the filling thank goodness was nothing like dulce de leche whew
