Yesterday was nutritionally dismal. I had whole-wheat toast with peanut butter and a honeycrisp apple for breakfast. And tea. That part was ok.

But lunch, vegan mac-and-cheese (which is basically whole-grain pasta, nutritional yeast, soymilk, salt, and olive oil).

Dinner. . . yeah, I had a glass of chocolate hempmilk before bed. I had more interesting stuff going on. lol

Carrie, why be so restrictive?! It sounds like you are eating very healthy things...besides, the amount of calories a person needs to eat per day varies by height.

The hospital was giving my comotose, 130 pound grandma 1200 calories as a minimum requirement to maintain life (until she ultimately died)

as an active normal person, you can afford to eat a bit more than that! eek

I plan my meals in advance so...

meal 1 = 6oz egg white omlet with 1 slice of vegan turkey and red pepper spread

meal 2 = a hand full of mixed nuts and coffee

meal 3 = salad, string cheese, a piece of jerky, and 1/4 cup of roasted edamame

meal 4 = 10 bran crackers and an apple

meal 5 = Italian veggie soup and kimchi

Not so for me. If I want to maintain weight I can have 1500-1800 a day. But I'm in losing mode.

Today I had the same thing for breakfast (yogurt and kashi go lean crunch).

Lunch is a salad of greens, broccoli, cucumber, peppers, onions, a bit of cheese and fat free dressing and some cantaloupe and pineapple.

1st afternoon snack is a small apple


I don't know yet what the rest of the day will hold.

You should try making your own soups and stews, its a good way of adding lots of filling veggies and controlling salt and calorie content. I recently started making soups and I was surprised how effortless it was

I've been meaning to post a reply on this forever... confused ...I don't know where my head has been:

As usual I have green, white, or oolong tea with almost every meal...but I need to remember to drink.more.WATER. Lemme see, so far as I remember

THURSDAY:

-no breakfast, but used traditional Japanese breakfast as my brunch/lunch:
grilled fish, miso soup (red miso with root veggies), brown rice, cucumber salad

-homemade shrimp toast, sliced tomatoes & cabbage salad w/ sesame citrus dressing


FRIDAY:

-small piece terriaki mackeral, light miso soup w/ wakame & tofu, brown rice

- homemade gyoza, mixed salad with citrus dressing

- homemade cream of cauliflower soup w/veggies

TODAY:

- I'm making an Eggs Benedict variation this morning; poached egg on spelt or wheat toast slice topped with sliced tomato, an undecided protein (slice of turkey breast, or bit of salmon), and my lighter version of hollandaise, sprinkled with scallions on top.

-for snacks I have nuts lying around everywhere, and I always munch on red pepper strips or fresh broccoli

-for a sweet snack I have unsweetened yogurt, which I'll add bluberries and a bit of lavendar honey to.

-my second main dish today will be daikon fettucine in tomato sauce, with chopped basil and freshly grated parmesean. It's Marimoto recipe (the chef from Nobu and Iron Chef), but it's SO easy, and oddly filling!

I eat WHATEVER I want, WHENEVER I want. I don't care about health (I mean, I do, but not to the point of "ugh, I won't eat that! It's so unhealthy!" rolleyes ) I don't care if I'm fat, I'm HAPPY.
